30 minute Turkish Lentil Soup

    Turkish lentil soup or Mercimek çorbası is a staple of Turkish cuisine where red lentils are simmered in a tasty broth with veggies and warm spices.
    Turkish red lentil soup is easy to make in 30 minutes and one pot. It has a smooth and comforting texture and a warm and soothing flavor, with a hint of tanginess from the fresh lemon juice.
    INGREDIENTS:
    2 tablespoons extra virgin olive oil
    1 large onion chopped
    2 carrots chopped
    1 rib celery chopped
    3 cloves garlic minced or grated
    1 teaspoon ground cumin
    2 tablespoons tomato paste
    2 medium potatoes peeled and cut into small pieces
    8 cups (2 liters) vegetable broth, add 4 cups at a time if your pot is not big enough
    2 cups (400 grams) split red lentils dried, not canned
    1½ teaspoons salt
    2 twists of black pepper
    1 lemon cut into wedges
    1 handful flat-leaf parsley chopped
    SERVES WELL WITH
    pita bread
    chili oil made with 1 clove of garlic, 1 teaspoon of red pepper flakes, and 4 tablespoons of olive oil

    I’m Turkish and this is definitely not the way we do it but respect everyone’s preferences.
    The original one is rinsed lentil with roughly chopped garlic and little bit of flour. Sauté those until you get the flour smell out. Add your salt and turmeric and choice liquid(chicken broth, water etc). After cooked blend it all and Enjoy!!

      @@alfiyafathima1576 küp küp doğranmış bir adet soğanı bir yemek kaşığı tereyağı ve iki yemek kaşığı sıvıyağ ile birlikle kavurun. soğanlar kavrulduktan sonra içine bir yemek kaşığı un ekleyin ve hızlıca karıştırın. daha sonra bir yemek kaşığına yakın salça ekleyin salçayı kavurun . sonra bir buçuk su bardağı mercimek ekleyin ve bir dakika mercimekleri de kavurun. üzerine sekiz su bardağı su ekleyin. (iki su bardağını tavuk suyu ya da bir adet tavuk bulyon kullanabilirsiniz ya da sadece normal suyla da yapabilirsiniz ama biraz tavuk suyu ile daha güzel oluyor)tuz, karabiber ve pulbiber ekleyin. mercimekler yumuşayınca pişmiştir. çorbayı ya blender ile çekin ya da süzgeçten geçirin. bitti.

    There is a Turkish restaurant near my house, and I’m addicted to their lentil soup so I’ve been googling lentil soup recipes. I actually thought that Turkish Lentil Soup has some mint in it?

    My Iranian friend taught me to make it exactly the same but no cumin or red pepper flakes, rather, add a heaping tablespoon of curry powder and optionally some coconut milk before boiling. I love it both ways and love how inexpensive it is!

    Is your pan ceramic or coated cast iron? I love it and went looking for some in the shop, assuming it was ceramic, but there was only cast iron available, so I wasn't sure.

    En güzel mercimek çorbası tereyağ, domates salçası, kırmızı mercimek, soğan ve zerdeçal ile olur. Biz Türkler genellikle çorbaya patates koymayız.

    Hmm u can put lentils in pressure cooker and give up to 5 whistles no need of blender the lentils become so soft that we can mash with ladle 🙂

    Try it this way:
    Instead of tomato paste, put 1 tomato
    No celeri
    For aroma, coriander and cumin. And in the end add dried mint
    Trust me it's 1000 better!

    You're missing out on mint. Celery is not authentic and can be left out (even less work). You wouldn't fry chilli peppers and garlic in oil to finish since it is traditionally served with turkish yogurt. Roasted dried chilli peppers and garlic in oil is traditional to serve with fried eggs and yogurt. Instead of parsley, try (turkish) mint, it's a whole different dish. (And it is onion - garlic - carrot/celery, not garlic after.)

    What do you mean "celary"? It is nearly never used in Turkish cooking mate. We use celariac but never in the maner of French based Western culinary tradition. It needs to be greenish yellow by the way. As one Turkish once said; "it is the lentil soup, only thing it needs is red lentils". Just boil the lentils until mushy, add butter, salt and blend...that is it.
