    Based on my experience, the difference between the curry powders are:
    Chicken curry powder : blended with most spices with cinnamon, star anise, cloves and green cardamom.
    Fish Curry Powder : blended with most spices WITHOUT cinnamon, star anise, cloves and green cardamom. (seafood and vegetable based curries doesn't give the right taste with these spices)
    Answer from my mom.

    iChang, it's easy to cook Basmathi rice in the rice cooker. After draining the washed rice, put it in the rice cooker and add 1.5 cups water for each cup of rice. Soak 30 minutes and then switch on the cooker. (If you're adding any flavouring, now is the time.) Let the cooked rice rest 5 minutes after it switches off.

    Looking at this fish curry reminded me of my grandmother fish curry that she will always make. Sometimes I cheat a bit by taking some of my grandfather fried fish and traded over the fish that was boil with the curry gravy. Then I added the fish curry gravy on top the fried fish, yum😋.

    Here in Malaysia, fish head is perfect match with curry. Fish head is the best part of the fish to cook curry, because the texture is smooth and tender.Well Done ichang! After Durian Queen, you're going to be Curry Specialist in HK! 😄 Looking forward next week video for Asam Prawn curry.

    Hi Ichang just wanna let you know a tip form old people in malaysia: water from the pestle and mortar will enrich the savory of the dish, meaning dont put water directly to the dish while cooking, pour water to the mortar and stir it with the pestle then with clean and bare hand, leave it for a moment to let the water soak all the juices from the mortar before pour it into the dish. hope this is helping.
    p/s: i enjoy all your cooking videos! pls dont stop cooking malaysian food.

    Long time ago, malay parents always refuse children to eat a fish heads . the reasons , it can cause forgetfulness. But actually parents want to eat delicious fish heads lah hehehehe

    When you eat fish head make sure you eat everything. The meat under the skull, the skin, the membrane around the eyeball, anything thats soft should be eaten leaving only the scales. Nothing should be wasted. Thats the excitement when eating fish head curry. Some people dont even need rice.

    Next time, in a rather simple way, add Jeera when you boil the Brasmati rice, and later when the rice is done and still hot, sprinkle a bit of chopped Poodina or Coriander leaves. It's refreshing.

    The difference between meat curry powder and fish curry powder is :
    1. The name 🌚
    2. The meat curry powder is a little bit savory and spicier rather than fish curry powder.
    3. The fish curry powder smells a little bit fresh rather than meat curry powder. It's because fish usually smelly a bit.

      And also, the blended spices between fish and meat curry are different from each other. Because fish curry, we don't need to use 4 sekawan. We only need to put in a bit of halba/fenugreek into the fish curry spice blend and also a lots of tamarind juice.
      Actually you can see the picture in the packaging between fish and meet. The spices are not the same.

      Usually meat curry taste slightly sweet, and fish curry slightly sour.
      Or is it came from the meat/fish itself?
      I didn't like fish curry much because of that taste.

    You can cook the curry gravy first and put salt/sugar and when it's nearly done and thick and you like the taste, you can continue to put the fish head and okra/tomatoes inside and let it cook for 20mins and the fish meat will stay together. (never overcook seafood)
    Don't put too much coconut milk so you'll taste the curry flavor more.

    My mom loves to grow plants... From herbs,fruits to flowers... But she never grows curry tree... She doesn't like the smell... She doesn't like coriander too... But i insist to grow it because i like to use the leaves in my tomyam and mi celup... I grow javanese coriander and now in a mission to make them produce more and more so i can sell them...

    my mom would wait until the gravy to boil first then she would add fish after, this is because fish is fragile and cant be cook for too long. and another tip, fish curry taste good to be eaten with white bread as well

    Hi iChang and Jimmy. Have been so long never comment to this channel. Today I would like to give a tip for you regarding banana leaf. You always use banana leaf when eating rice and it so awesome. Next time try heat the banana leaves over the fire of stove for a couple of second so that that it will not easily to torn. Banana leaf surface will immediately turn to be darker and shining a little bit. Wipe the banana leaf surface with a clean cloth before serve the rice. This is more hygienic and rise up the banana leaf aroma also than just wipe the leaf itself.

      actually this is Che Nom style which is Malay taste. Indian is more curry n with sometimes just enuf coconut milk. I like curry Malay style when I am hungry. Indian style is when there r so many other side dishes the Indian style.

      Add 3-4 more tbs of currypowder for that size of fish + 3-4 tbsp more oil to fry the curry mix until the oil seperates and just 1/4 of the coconut milk you put will be more than enough. Too much coconut milk kills the curry flavor

      I prefer both dried tofu and tofu. It varies. The dried tofu absorb more sauce and it explode in your mouth waaaaaaa

    when u eat curry with rice, put some kicap manis on the rice!! 100% will not regret it! new level of taste!
