    My mum shows me her amazing recipe and techniques for cooking the best Assam Fish (亚参鱼).
    INGREDIENTS LIST
    ASSAM (Tamarind) Gravy:
    Ingredients to blend - Garlic, Shallots, Red Onion, Ginger, Galangal, Torch Ginger (Bunga Kantan), Candlenut (Buah Keras), Dried Chilies, Belacan (Fermented Shrimp Paste),
    ==
    Assam Skin (Tamarind Skin), Assam Paste (Tamarind Paste), Tomato Sauce (Ketchup), Chili Powder
    ==
    Tomato, Ladies Fingers (Okra)
    Lime Leaves, Lemon Grass

    Auntie Ah Choon is a self taught chef who for about 20+ years ran a successful Economy Rice Restaurant, Restoran Jia Ling in Skudai, Johor. With no real formal training in the culinary arts, everything she knows about cooking comes from a life time of pure experience, observation and self improvement. She has spent time a great portion of her life cooking in both Singapore and Johor Bahru, Malaysia. Ask any of her former customers, they'll happily testify just how amazing her food is and how efficient she is when it comes to being in the kitchen.

    I cooked this today... TOOOOOOOOOOOOOOOOO GOOOOOOOOOOOOOOOOOODDDDDDDDDDDDD !!! lol.... so so good, like in restaurent.. my variation including, using ikan tongkol (柴鱼) cut in slices.. add shrimps , add eggplants... SUPPPPEEERRRR AWWWEEESOOMMEEE !! Thank you auntie ah choon!!

    Auntie, your cooking and teaching is fantastic and detailful and very clear. You shown on your channel- SG curry. Frankly speaking, i prefer KL or Ipoh curry, they are super . Especially in KL petaling street the curry mee is superb-superb- superb .😋👍. If you know the recipe , please upload it .     Hallo Chef Ah Choon., recipe u bagus, tapi Curry ikan u saperti Rendang Ayam, kerana u sudah bubub buah ketas 3 biji.. Ingat serau kisar satu batang dan tumis satu batang, chendehon da bunga kantan bubuh sedikir, u sudah miss out chendehon, jangan campur chilli sos dalam kuah ,haya u boleh bubuh serbik cabai cap Babas dan sedikit serbuk kujid, ikan u haya goreng 70 per sent masak sahaja , jika kuah u nak menang orang, nenas hujung yg masam ambil 5 inci ,kisar dan juice dan isi nenas campur masuk dan kuah Asam pedas ikan ini.. Jika u bubih Chilli Sos, recipe ikan kiah u sudah silap ya.. Gd job.. Thank u, Kam Sia..

      Yes, u can choose to not put the dried chili, and just a bit of chili powder (chili powder won't be too spicy, and will help with the color), and u can add ketchup in as well :)

    she's into tomato sauce. Really no need for that. The recipe is exactly same all over east Asia and in south India. Wonder how they came to be same. Some differences are golangaal, shrimp paste. But none others.
