Actually the chicken u have to boiled with rempah 1st . Punch: corriender seed,garlic,turmeric put in water with chicken,hati,pedal. Put salt & bay leaf. Boiled it.. Let the chicken absorb rempah . Then u can goreng the chicken, with big fire coz we want the chicken crispy outside but still tender inside. Btw good job 4 both of u.. kipidap 💪💪 😘😘 Sory for my broken english 😂😂😂
First. U can make malaysia nasi goreng kampung style with leftover sambal. Deep fried the anchovies till it become crispy. Set aside n start frying the rice with sambal. Add eggs and any kind of vegetables you like. At the end throw in the fried anchovies. Ready to serve.
Maybe in the future you can use the regular red chilies instead of bird eye chili to make the sambal less spicy. The chicken should also be boiled with some other spices like lemongrass and turmeric before frying. Not just boil with plain water. Other than that everything else looks really good!!! =D

Boiled chicken with the garlic,ginger, tumeric + salt.. then fry untill the golden & crispy.. then matching with soup from the boiler water. We not eat "ayam gepuk" with soy sauce..😊 maybe can try next time

I actually like to dip the deep-fried tofu and tempe in the kicap manis! & the hot oil that should be poured over the cabe should be the oil after frying the chicken, to make it more aromatic!
I think they season the chicken before or while boiling. Thats why the color is different. Also, i think u need to fry the chicken longer. The key is crispy skin chicken for ayam geprek/gepuk
That sambal looks legit 👍🏽 now I feel like trying this recipe.. The chicken they used in their restaurant was boiled with some turmeric, lemongrass and salt I think.. I usually see that in Indonesian cooking.. Even if it is for Nasi Ayam Penyet, they cooked the chicken the same way so that when you fry it, it will looks nicely golden brown and also for the flavor.. BTW this dish really have many proteins in it.. There's chicken, tempe, tauhu, and peanut sauce.. Rich in protein and carbs 😂 So satisfying 😋

Yesss, Thin fried tempe is so addicted! It's also good if you make tempe kicap with that fried tempe. Just 'tumis' some onion, and then put a kicap and cut some chilies. Mix that sauce with fried tempe. Marvelous! Eat with hot rice and eggs! Yummy! 😋
Wow... U guys are so good. Ayam gepuk or ayam penyet is very famous in msia. Btw here some tips to fry the chicken. U have to fry it in very hot oil, coz it make the chicken crispy outside n still soft inside.. if u want to make it even crunchy, just make some batter consist of rice flour, coriander powder, cumin powder, tumeric powder and ginger garlic paste,, it will give u extra flavour and taste better..
Basically this ayam gepuk have 3 level of spicy. Normal, spicy & extra spicy. For extra spicy, there is no kacang in the sambal but you will eat while crying 😭 but more spicy, more tasty. Trust me! 😂 By the way, one of the ayam gepuk pak janggus branch is just in front of my house. After watching your video, i'll definitely go buy them tomorrow!! Soo hungry watching u guys eat 😭

The effort is 💯 because i-Chang bought the Cobek & Ulek batu just for making Ayam Gepuk. Maybe need to marinate the chicken before fry it (that's why the chicken looks yellow - turmeric) more flavor.

Yeah, I usually mix red chilies with bird eyes to get the colour and volume. It will not so spicy and you can enjoy the sambal.

Bird eye chilies too spicy..can just use normal red 🌶️🌶️🌶️ mix with red bird eye chili.
