    Vada Pav Bites
    Makes - 16-18 pieces
    Ingredients
For The Dry Garlic Chutney (for 1 small jar)
Garlic cloves (with skin) - 5-6
    Toasted bread slice - 1
Fried besan chura (made while preparing the vadas)- 1 cup
Red chilli powder - 2 tbsp
    Salt - to taste
    Method:-
    - In a grinder jar, add garlic cloves along with the dried bread slice & grind to a coarse texture.
    - Now, add the besan chura, salt and red chilli powder. Grind again to a coarse mixture.
    - Store in an airtight container.
    For The Vadas
Extra soft Boiled potatoes - 2 (big)
    Salt - ½ tsp
    Turmeric powder - ¼ tsp
Garlic cloves (without skin) - 6-7
    Ginger - 1 inch
    Green chillies - 2-3
    Oil- 2 tbsp
    Cumin seeds - 1 tsp
    Mustard seeds -½ tsp
    Curry leaves - 10-12
Freshly chopped coriander leaves - 1 tbsp
    For The Batter
    Besan - 1 cup
    Salt - ½ tsp
    Baking soda - ¼ tsp
    Water - ½ cup
Fresh Bread slices to make our version of the pav 😉- 3-4
    Method:-
    - In a mixing bowl, add the boiled potatoes & mash them completely with the help of a masher. There should be no lumps whatsoever.
    - Season with salt & turmeric powder and knead it into a super soft dough.
    - Now make a “thecha” of garlic cloves, ginger and green chilies either in a mixer grinder or with the help of a mortar and pestle. The paste should be coarse.
    - Now heat oil in a kadhai, add cumin seeds along with mustard seeds and let them crackle.
    - Then add a generous amount of curry leaves and let them splutter.
    - Add the prepared “thecha” and sauté till its raw aroma disappears.
    - Finally add the potato mixture and toss to combine all the ingredients.
    - Cook for a few minutes, transfer to a bowl and allow it to cool.
    Now prepare the batter
    - In a mixing bowl add besan along with salt, baking soda and water, whisk well to form a batter that is thick enough to coat the vadas but not too thick otherwise it’ll taste doughey. Keep aside.
    - Now, thin out the bread slices with the help of a rolling pin and cut them with a round cookie cutter, the size of your appe pan. Keep aside.
    - When ready to eat, add freshly chopped coriander leaves to the cooled potato mixture and knead it in. Then take small portions and shape them into spheres.
    - Now, heat and grease the appe pan with oil. Take the potato spheres, dip into the besan batter and place them in the pan. Let the vadas cook from both sides till they get golden brown.
    - Once done, take them out and keep aside.
    - Now grease the appe pan again and place the round bread slices on each appe mould. Then keep the prepared vadas on top, so that with its weight, the bread slices get toasted and also take the shape of the vadas.
    - Now take everything out of the pan and start the assembly.
    - To each inner slice of the toasted bread, apply a little green chutney, place a vada on top and finally sprinkle the prepared dry garlic chutney on it.
    - Place the assembled pieces on a platter of choice and stylishly serve your delicious vada pav bites!

Hello Amrita....I love all your recipes. My husband loves bhajiya and pyaj ke pakore etc . But unfortunately he is suffering from heart disease and cannot eat deep fried items. It would be very kind of you if you teach how to make bhajiya and payji in AIR FRYER. My son also says mamma Amrita aunty se pucho na kaise banate hain Air Fryer me.....really love all your episodes ❤️ ❤❤❤

Awww so sweet! Please give your son a hug hug from me ❤️ I usually don’t use Air fryers as I don’t fry very often. So once in a while when I do, I like to eat authentic food. See even when you fry, if you do it at the correct temperature, the bhajiyas will get done in just about a minute or so. Then once you take it out on an absorbent paper, most of the oil, comes out. So all in all, frying is really not that bad. But still shouldn’t be done very often ❤
