Would of been great to know how often you eat either meat. Also, what else you eat with the steak or chicken. Being that this is for 2 weeks do you freeze some of the meat? Is it safe to eat if you do not freeze? I am just picturing someone eating 2 week old meat that’s been sitting in the fridge.What about the flavor after 2 weeks? You are the professional so this is why I ask these questions?

Hell yeah you wash your chicken.. who doesn't? You crazy or something? You want Salmonella or something? Show me someone who doesn't wash their chicken, or beef, or anything vegetable or fruit coming from the market. With all the fingers that has been touching that stuff, but oh well, those who don't wash their meat, chicken, and fruit, says al lot about that person. One thing for sure,.. ill never eat at your house. Probably don't wash anything there as well.
