One thing I learnt, with green beans, if you have diabetes, the green beans steamed or boiled, use the green beans water, as getting your sugar lower. It really works. Then use the beans for your meals.
The wife and I ran a small FarmStand for 23 years. We’ve owned and operated our own business for 36 years, so we only filled a farm wagon with vegetables, honey and eggs on the weekends August thru September. We’ve owned did not get rich, to say the least, but the wealth we created was the friends we made and the community we created. There would often be 15 or more lawn chairs full of people sitting for awhile just solving the world’s problems, and, since it was only on weekends, all sales were face to face. Every thing people bought was cheaper than the grocery stores, and if you couldn’t pay, you always left with food. Often people who didn’t have money with them went home with bags full and either returned next day or the next weekend with money. I worked hard in my business, probably harder than was good for me. Weekends at the FarmStand always restored us physically and mentally. Ready for another week of hard work. Life is a FarmStand! Good luck in the year and years to come.

I, too, went to the grocery store today😮 I dont know how younger people with families do it. I cannot believe the prices! I went to Dollar Tree instead and picked up a few items to fill some holes in my pantry. It's truly awful out there, BUT it could be much, much worse. When I am tempted to complain, I remember Hurricane Helene and what those states impacted by it are dealing with.

Cherry Pie filling over (Pound Cake store bought) with a Scoop of Vanilla Ice Cream is absolutely the bomb when your sister visits and you & brother haven't seen her in 4 years after eating fillet mingon baked tater corn on cob dinner I honestly don't know how we all ate that much but there is something about good food and good company that makes your appetite grow as we grew older
Appreciate your practical, realistic and don’t panic but smart to preserve’ attitude and approach. Always learn from you!!! For those like us that don’t grow enough carrots for the whole year, I have found a quick way to have some to put in soup and a couple of baking recipes. I dehydrate the pre shredded carrots from grocery store .. several jars along as I have time to ‘stay ahead’. I tend to freeze any leftover carrots from our small patch as I don’t have a pressure canner- can only do water bath.
I grew everything from seed this year as well, and it’s not that you just are not paying someone else to grow your food you’re saving hundreds and hundreds of dollars on produce at the price that it is sold in store. $5 for packet of 100 zucchini seeds when you’re paying $2.99 a pound per zucchini. My home grown zucchini is pound or over a pound anyway per zucchini when picked. You’re saving hundreds of dollars a year on produce if you’re canning it yourself. Just something to keep in mind.

Hello Rachel and Todd! Although i have a very small garden, i decided to take 2024 off to enjoy travel and other hobbies. I still managed to fill my pantry and freezer with beautiful bounties from local growers. I haven't missed out on anything and feel great about planning the 2025 garden! I love that you can add pickle crisp in the carrots and the zinc in the green beans. Would you pretty please post how much in each jar of the beans and carrots...than you bunches!!!!
For zinc it is just 1 vitamin tablet. When I add pickle crisp to pickles, I use about 1/2 teaspoon to quarts. I'm assuming it's the same for carrots too.
My favorite jam/preserves is black raspberry. I just planted several black raspberry bushes this year, so I'm really looking forward to making jam with them.
Just went through our first canning session. Ended up with Blackberry, strawberry, peach, and blueberry jam. Thank you for all the canning videos we really learned a lot.
I canned 86 pints of beef broth from 7 biiiggg bags of beef bones my boss gave me. He was going to throw them away! Then he just gave me a box of frozen chicken legs that he wanted out of the work freezer. So I'm cooking them so I can pull off the meat and can it today. Then use the broth in the jars with the meat. I had to clean out our freezers to make room for 200 pounds of beef my boss gave me. Yes, he's an awesome boss! So I took all the chicken scraps and legs that I had in my freezers and made broth. I canned 48 pints and 7 qt. Of chicken broth from scraps. Then our local restaurant supply store had 10 pound bags of russet potatoes #1 for 2.99 a bag. And i bought 8 bags to can. Have 2 bags left to can. I was totally out of canned potatoes. Oh no! 😅 since I started working full time 2 years ago. I haven't had the energy to grow our garden. So I'm just doing what this 65 year old can do. Also canned 26 pints of clam chowder base. And 16 pints of chili. Still have apples to can. And those 2- 10 pound bags of potatoes. Will probably find some more to can too. Need to can dry beans that I grew 2 years ago. So there are ways to grow your pantry. Even if you don't have a garden. Just keep your eyes and ears open to deals.
I work at two different restaurants and they save me the fat they cut of the meat. I make my own tallow and lard. Great job! I can feel your excitement.

Our house was built in 1891 and I have a dryer vent that looks just like yours - straight across the top of our pantry/laundry room. 😂 I have a lot to learn from you in the way of food growing and preservation. What you are putting up is much healthier than anything you can get in the grocery store. Not only are the grocery store more expensive than it used to be, water is started to be added too - so shrinkflation. Boo!
I love your pantry and your ability to be so self sufficient. I'm a senior, lost my investments from federal executive orders, suddenly. I have always had gardens and grown my vegetables, but never in a place to be able to preserve, other than freezing or dehydrating. I learn so much from you, and wish I had the funds to stock a pantry like yours. But baby steps and scratch made...I'm trying! I'm better off than my neighbors!
For water bath canning, you just need a pot that's big enough to cover the jars with 1 inch of water. A soup pot works well. I've bought a couple of "official" water bath canners at thrift stores for only a few dollars...jars too and other canning equipment. My favorite small canner I got at a garage sale for $2. Not everything can be water bathed, but there's still a lot that you can try like jams, jellies, tomatoes and pickles (and more). Give it a try!

Store your carrots with towels in zip lock bags Becky on Acre Homestead does it and they last a year. I use the Deb Myers green bags and paper towels or towels. I love her containers to they are worth the money. I love pear jam I don't know why no one makes it especially with cinnamon.
I'm really into fermenting. This week, I did beets and beans. I feel their the best for your gut. And I am crazy for kimshi. You should be very proud of all your hard work!!!

Pear purée is a favorite here. I also do peach purée and sometimes mix the applesauce with peach purée to make peach applesauce (after we open the jars).

Rachel, I found your sloppy joe sauce video canning video a couple of weeks ago. I had canned ketchup last year, however, I didn't cook that ketchup down long enough so it was quite runny. Heinz had no concerns that I would ever be competition with that ketchup 😂. I needed to find a way to repurpose it so I used it to can sloppy joe sauce. It came out great!! Manwich is a thing of the past on our shopping list, for awhile anyway. Love your canning videos and thank you so much for that sloppy Joe sauce one.

Never thought to put a bit of pickle crisp in with carrots. I do use zinc in green beans. I've found too that 1tsp in pints and 2tsp in quarts of vinegar helps to preserve the color of corn, potatoes, green beans and kale. You can't taste it either, that little bit. I still have carrots to harvest and can so I'll give the pickle crisp a try, especially because those carrots will be on the small size and will definitely turn to mush in the canner.

Looks like you are doing great! I started canning back in 2019 and there were definitely some things I won't can again. At this time, I'm learning what we use the most and those are the things I can. Sorry about the pickles. I canned bread and butter pickles for the first time last year and I was hooked so that and the pickled red cabbage that you showed are 2 must haves!! I'm also pretty basic with tomato products I make, juice, sauce and diced tomatoes. This year though I added BBQ sauce and chili base. I'm just really paying attention to what we use the most.

What beautiful produce and preserves. I especially love the dried herbs and teas . Im slowly building up my dried tea and herb shelves too. We had no cucumbers last year due to very hot dry conditions but this year I'm hoping to get at least plenty to eat if not pickled too. So delicious. I do what you are saying you need to do and that's back off on certain years of not growing so much if any at all such as my bell peppers between dicing and freezing and dehydrating I can go every other year., the 3 main things I do a lot of is potatoes, tomatoes for my diced and sauce and some tomato soup, I'm not having luck with getting big onions but I keep trying, and my fall garden of broccoli, cabbage, lettuce, spinach and arugula and radishes, also carrots. Your grand babies would love those carrots also. Do you freeze dry your onions? it would be a great way to keep them. As always Love You miss Rachel...
Hi Rachel, I started my canning journey in 2020. We turned a bedroom, in our home, into my working pantry. I recently went through all my inventory to see what we need to restock. There are some things we don’t use as much as others. I know they say food will last up to 18 months. My question is, do I need to throw out food that is past the 18 months? I really enjoy your videos and I’ve learned so much from you. Thank you for sharing your knowledge on food preservation with us. 🙏♥️
It’s not really dangerous, but there are “rules”. I wouldn’t stack more than 3, keep them in the box as it distributes the weight across the tops of the other jars, and you shouldn’t stack quarts on pints, or heavier jars on the lighter jars. If you don’t have boxes for the jars, you can use flattened cardboard between the layers, again for weight distribution. Just make sure to check your seals occasionally and when you use your jars.

Pickle the Green Tomatos! It works. Chop and soak 'em in salt for a little while, then rinse and can them in standard dill pickle fashion.

You can also freeze dry the pumpkin. Shelf stable, you don't have to think about defrosting it, and it works great as pureed pumpkin.

I've found too that 1tsp in pints and 2tsp in quarts of vinegar helps to preserve the color of corn, potatoes, green beans and kale. You can't taste it either, that little bit. I still have carrots to harvest and can so I'll give the pickle crisp a try, especially because those carrots will be on the small size and will definitely turn to mush in the canner.

Looks like you are doing great! I started canning back in 2019 and there were definitely some things I won't can again. At this time, I'm learning what we use the most and those are the things I can. Sorry about the pickles. I canned bread and butter pickles for the first time last year and I was hooked so that and the pickled red cabbage that you showed are 2 must haves!! I'm also pretty basic with tomato products I make, juice, sauce and diced tomatoes. This year though I added BBQ sauce and chili base. I'm just really paying attention to what we use the most.

What beautiful produce and preserves. I especially love the dried herbs and teas . Im slowly building up my dried tea and herb shelves too. We had no cucumbers last year due to very hot dry conditions but this year I'm hoping to get at least plenty to eat if not pickled too. So delicious. I do what you are saying you need to do and that's back off on certain years of not growing so much if any at all such as my bell peppers between dicing and freezing and dehydrating I can go every other year., the 3 main things I do a lot of is potatoes, tomatoes for my diced and sauce and some tomato soup, I'm not having luck with getting big onions but I keep trying, and my fall garden of broccoli, cabbage, lettuce, spinach and arugula and radishes, also carrots. Your grand babies would love those carrots also. Do you freeze dry your onions? it would be a great way to keep them. As always Love You miss Rachel...
Hi Rachel, I started my canning journey in 2020. We turned a bedroom, in our home, into my working pantry. I recently went through all my inventory to see what we need to restock. There are some things we don’t use as much as others. I know they say food will last up to 18 months. My question is, do I need to throw out food that is past the 18 months? I really enjoy your videos and I’ve learned so much from you. Thank you for sharing your knowledge on food preservation with us. 🙏♥️

It’s not really dangerous, but there are “rules”. I wouldn’t stack more than 3, keep them in the box as it distributes the weight across the tops of the other jars, and you shouldn’t stack quarts on pints, or heavier jars on the lighter jars. If you don’t have boxes for the jars, you can use flattened cardboard between the layers, again for weight distribution. Just make sure to check your seals occasionally and when you use your jars.
