Refika's Irresistible TANTUNI Recipe 🌯Turkish Beef Wraps | Mouthwatering Turkish Street Food

  • Experience the delight of making Tantuni, an iconic Turkish street food, right in your kitchen! This video features Refika's expert recipe on how to prepare these delectable beef wraps.     400 g beef tenderloin, very thin strips
    4 lavash
    2 tomatoes, thinly sliced
    1 teaspoon of isot
    1.5 teaspoons sumac
    1 teaspoon salt
    1 teaspoon black pepper
    1 pinch red pepper flakes
    Half a glass of hot water
    10 sprigs of parsley, chopped
    Half onion, sliced
    1 teaspoon butter
    Put olive oil in a large pan and heat over high heat. Place the meat in the heated oil, spaced apart. While the meat is roasting on high heat, add chili peppers, 1 teaspoon of sumac and isot to the hot water and mix.
    When the meat is roasted and turns brown in places, add butter and salt.
    Spray the sumac and isot water onto the pan occasionally and scrape off the remaining flavor.
    Add the cherry tomatoes to the pan and continue roasting over medium heat, adding water occasionally.
    Mix onion, parsley, salt and half a teaspoon of sumac.
    Put butter in the pan and press the lavash onto the meat. After the flavor of the meat transfers to the lavash, put the cooked meat in the lavash.
    After adding the sumac onion, first fold the short edges in and make a wrap.
    Whether traditional wrap tantuni or bread tantuni is ready!

      You should do Texan version of it. Smoke the brisket, slice them thin and sear them on a pan with Turkish spices and add a little bit of bbq sauce (gotta add some Texas blood, right?) and invite me to taste 😀

    I love using isot. I never heard it before you taught me about it. I actually put it in my brown children’s stockings for Christmas last year.
    Since I have your knife and you sharpened as such then I won’t no longer be so afraid to sharpen it. I love your knife so much.

    We have the same in Lebanon but we add tarator sauce which is tahini,lemon garlic,salt and cold water,so we add this sauce before rolling the bread and its our meat shawarma

      You can boil the meat first as in the original. You won't regret trying it when you come to Turkey. 😋 I also recommend you to try Tantuni with yoghurt.

    Street food in Mexico beats the world! It’s just absolutely the best, my favorite is beef head tacos, I’m not sure if you guys use the head meat in turkey but it is so delicious and when you put it in tacos with fresh onion and cilantro and a very spicy salsa it’s just heaven, also we dip the corn tortilla in the meat juices like you did the lavash 👍🏻

      Street food in Thailand is also rich and good. Yes, In Turkey there are dishes with head meat even with the fat of "eye". It is called "söğüş". It is more regional thing. I never tried it...

    Nice quick and easy recipe. I might be more inclined to use a cheaper cut of beef and pre-cook. I don't mind cooking once and cooking again. Interesting info about the cotton, cotton seed oil. Hello from lovely Oregon, US.

    So about to Ayran from a Shop - I Mix it at my temporary Home in Istanbul with 1/2 Water and 1/2 Ayran - so refreshing and light with real taste... To Tantuni - I personally like much thinners cuts - these are only personnel preferences...

    Refika, can I use Aleppo pepper mixed with additional crushed red pepper flakes instead of Isot? My understanding is Aleppo is Isot's "cousin" but not as spicy. I can't wait to make this.

    If you do the recipe, don't forget to press the wrapped tantuni on a pan to create an oily goodness and a crunchy texture.

    Refika can you please tell how to keep olive oil fresh? My oil seems to go bad after 2 to 3 weeks after it is open. Large bottle seems such a waste. What do I do? Thank you Refika I love you and bless you.

    If you want to evenly and finely slice meat you can semi freeze the meat, this firms the protein and allows for fine thin cuts across the grain of the meat. With the sumac and onions i like to use both fresh parsly and dried parsley, the dry parsley rehydrates with the onion juices. I am curious what the deglazing stock would be like with the addition of Tomato & Pepper Mix Paste - Karışık Salça rather than just adding red chilli flake, any thoughts?

      Hello, thank you for your comment. If you deglaze it with any kind of paste, the flavor will change. The original recipe uses only cottonseed oil. So tomato or pepper paste is a product that is not included in this recipe. Of course you can use it, but it will be tomato sauced meat. ☺️

      @@Refika Thank you for the reply I may just try using diluted pepper paste rather than pepper flakes. I like to make the original recipe as best as i can, then i start making changes. Afew good, most soso, some oh so aweful, but i learn something even from my mistakes.

    Oh…..Ayran is buttermilk…..can be spiced or sweet….but buttermilk consistency….lassi is thick and viscous….but damn delicious….both are great for cooling off in summers….
