This Sesame Oil Ginger Chicken recipe (麻油鸡酒) is one of my favourite dishes and I just love the way Mummy cooks it! In this video (i.e. no cornstarch!), Mummy will teach me how to finally cook it the way she does (YAY!). This Sesame Oil Ginger Chicken (麻油鸡酒) is a typical confinement food for post partum women as it contains lots of ginger and alcohol from the DOM to help repel excess wind and improve circulation to keep a new mum's body warm :).
Ingredients
800g kampung/free-range chicken
0.5 tsp of salt
2 tbsp light soya sauce
1 tsp dark soya sauce
1 tbsp oyster sauce
sesame oil (as needed)
120 g ginger julienned (feel free to add more ginger if you prefer)
50ml DOM (you may substitute Shao Hsing Wine or XO if you prefer)
250ml hot water

What's the purpose to put the ginger when all the ginger juice most nutrition part being evaporated

u can use the steel pan to fry the ginger instead of transferring. Also never over heat the sesame oil as it will not taste good. You should fry the ginger with half normal oil first then when about to be golden brown the ginger u add the sesame oil. For a richer taste dont add water, add shaoxing wine! no need DOM!
