The reason for oil and butter mix is because butter burns and browns quickly, by adding oil to it will reduce burnt butter taste. one advice use a high heat oil like Avocado, peanut, sunflower Oil. Olive oil will burn as well.
Adding oil to butter does not change the smoke point what you need to use is. Clarified butter smoke point is two hundred and fifty degrees clarified butter is four hundred and eighty

Sear the fish in a neutral high heat oil and at the last 2-3 minutes add a knob of butter, herbs and maybe a squeeze of lemon. baste the fish with the butter oil mix with a spoon to just add a bit of richness to the fish!

I tried to fillet it and messed up 💁🏽♂️ so i pan fried with the skin on! Just threw some cajun & lemon pepper on it with some butter lol. I enjoyed it over white rice!

People who catch hardheads usually treat them like trash fish, but they're pretty underrated. Also try sand fleas. They sometimes sell them or you can try to dig them up yourself. Much easier to catch than fiddlers and in my opinion are the best surf bait.

Best thing you can do with that pompano rig is separate the jig from the teaser and tie both on with a loop knot. Wouldn't hurt to buy a few more and mix colors like yellow jig and pink teaser.

my 10 year old literally asks to go catch hardhead catfish. They take an extra minute to clean but the meat is way better than freshwater cats. I dumped them my entire life until recently. I don't like many fish and i guarantee i will keep those now. My kids loved them. I snip the 3 spines off, hand wash off some of the slime, and they filet nice and easy. I don't understand the hate they get. It's a little more work but the meat is fantastic.

I know that pier well lol, use size 1 circle hooks with cut shrimp on a 1oz Carolina rig around the benches. You’ll thank me
same shrimp on circle hooks works best.

Definitely bring the filleting back! And 3.5 times out of 5 go with lemon for fish instead of lime. Fry some taters in that extra butter and oil.
