  • Pork Leg Roast is very impressive roast to serve to friends and family. In this video I will show you how to make it Crispy and juicy at the same time.

    Barbecue rub: • How To make your own B...
    Injection ingredients:
    apple cider vinegar - 1 cup
    worcestershire sauce - 2 tablespoons
    Lime juice - 1 lime
    tabasco sauce - 1 teaspoon
    Salt - 3 tablespoons
    All purpose barbecue rub - 1tablespoon
    How To:
    - Score the skin of the pork leg
    - Mix the ingredients for the injection fluid and inject all of it in the leg.
    - Apply the barbecue rub on to the exposed meat. Apply a lot of salt on the skin of the pork leg.
    - Start up your barbecue and set it to roast at 200 Celsius or 400 Fahrenheit.
    - Place the pork leg over indirect heat on your barbecue.
    - When the skin is starting to cirspen up, brush of the sal from the skin.
    - Keep the temperature up by adding charcoal if needed.
    - At a minimum of a 68 Celsius 154 Fahrenheit and a crispy skin the pork leg is done.
    - Let the pork leg rest for 30 minutes.

    I said it once and I'll say it again Roel. Love your older videos where you are doing things a lot more simplified. I think big part of it is I can identify more with you without all this extra equipment and fancy grills you use nowadays. Love the way you explained your cooking techniques also! Either way, keep on doing what you do.

    This is a similar approach to what Puerto Ricans call "Pernil" or "Pernil Asado" and it's glorious, only substitute the bbq rub with garlic, salt, pepper and cumin, or a seasoning called 'adobo'. Great job on getting the most important element absolutely dead on, which is that crusty, crispy skin! Rock on. subscribed!!

    Looks great! That injection is almost - almost - like (it's very similar) to Eastern North Carolina BBQ sauce/mop sauce used exclusively (almost) for pork, usually a whole pig, but often shoulders in backyard barbecuing. .

    You may be the only person on UA-cam that knows how to properly use a Weber kettle. The position of the coals and the position of the vents on the hood are critical to getting the best results. I have been cooking the way you show here for more than 38 years based on "common sense" which apparently is very uncommon. I started cooking this way in 1980 when I purchased my first "Little Joe". I just subscribed. Watching videos of people cooking with direct heat with fat dripping on the fire on a Weber with the cover on is unfortunately more common than common sense.

    Great looking pork leg :) Only thing I would suggest is that when you inject please try and use the same hole as much as possible to inject the juices so it dose not run out during cooking so much ( It makes it more juicy ) ;) Always watching and enjoying :)

      mark--He injected into the bottom rather than the top. I would think that would promote run out. What do you think? Is there some reason to not inject in the top? Thank you.

      Actually by the time the juices start running out its fat that is rendering, and the muscle fibers have absorbed the brine. Did you see the juice running out? Looked juicy enough for me!

      In my opinion best way would be to Just marinade It overnight rather than pouring It inside or manage to pull the skin and pour It underneath It and use rock salt instead of the thin one. Last thing go for fennel seeds, those go amazing with pork. Anyway awsome results!!

      I think the rub prevented the juice from dripping, along with the fat absorbing the juices.

    Oooohhhyyeeaaahhhh, brother... that is damned close to the holy nirvana, olymp or elysium... the pig is the ham and the ham is the pig... we europeans do it since ages all around.... in thousand ways from melon con jamon to parma ham, prsut, up to danish bacon, ham from the ardennes... and as a roast all the same to us. That is for sure a deal!

    I really don't understand the need for injecting. I believe that the meat has enough flavor in itself. The injecting destroys the delicious flavor of the pork. Just my opinion.

    You definitely nailed it, here in the states if you keep barbecue in like that you would be considered a good old southern boy cuz that's exactly the way Southern Boys cook barbecue here in the south of Alabama, I was highly surprised even your injection recipe is pretty darn close the only ingredient that was missing was the Budweiser beer in the mix. I enjoy this video a lot great job.
