If we want to resurrect last nights soggy chip shop chips, even those fried in sunflower oil we put a little beef dripping around them on a tray and warm them in the oven, they crisp up beautifully.
I melt some dripping in a pan & coat the chips, then I airfry them for 10 minutes, then leave them as the heat penetrates the chips. Then I airfry again to brown them, best tasting chips, bonus is its safer than deep frying the chips & theres barely any fat left on the chips but they’re very tasty.

Buy a deep pan and a basket that fits. Fill half way up with beef dripping and away you go
