If it’s any consolation I would have guessed that it was your hydraulic pump too! There must be a pressure relief valve with a weak spring or something but if you can maybe find a diesel mechanic that worked at Ford Industrial at some point he might know what the problem is if it’s a common problem. It’s very vexing because why would the hoses and cylinders jump for a second I was shocked when it didn’t work but keep at it you will figure it out 🇨🇦😀
These kind of things make for great content! On the edge of my seat. I just had the injection pump rebuilt on my 310 and low and behold it was the pickup line at the tank letting air in. I know the exact feeling of getting it all back together with money spent and then the same thing happens. Disappointing to say the least. At least you'll have peak power when you get it figured out. Must be like a relief valve is shot and kicking in too soon. Keep at it and let us know how it goes.
Your red line on that ford 3.3L diesel is about 2500 rpm. The injection pump has a centrifugal governor that prevents it from revving any higher. I have a 1990 555C (4 cyl 4.2L), great backhoe that's fairly easy to work on. Keep up the good fight.
