회오리 같은 단면이 멋스러운 허리케인 롤케이크를 만들었어요~
예전에 만들었던 레시피에 커피를 추가해 모카 롤케이크로 만들어 봤는데 훨씬 향과 맛이 풍부한 느낌이 들더라구요~
반죽을 다 붓고 모양을 낼 때 바닥까지 닿도록 천천히 움직이며 간격을 좁게 해서 모양을 내야 단면이 잘 나오는 것 같아요~
시트가 식으면 잘 갈라지는 편이라 따뜻할때 가나슈를 부어 말아야 한답니다~
가나슈는 미리 만들어 실온에서 식어 두었다가 사용하는게 편한 것 같아요~
특별한 장식이 없어도 모양만으로도 멋스럽고 특이한 롤케이크랍니다~

▶틀 사이즈 Mold size : 25.5cm x 34cm
▶재료
따뜻한 우유 20g
코코아파우더 10g
인스턴트 커피 가루 5g
달걀노른자 5개
설탕 10g
바닐라익스트랙 5g
식물성 오일 50g
우유 75g
박력분 95g
달걀흰자 5개
설탕 90g
가나슈 (다크 초콜릿 100g + 생크림 50g)
▶레시피
1. 따뜻한 우유에 인스턴트 커피 가루를 넣고 녹인 뒤 코코아파우더를 넣고 섞어 둔다.
2. 달걀노른자에 설탕과 바닐라익스트랙을 넣고 섞고 우유와 식물성 오일을 넣고 섞은 뒤 박력분을 체 쳐 넣고 섞는다.
3. 달걀흰자를 휘핑하다가 큰 거품이 올라오면 설탕을 3번에 나눠 넣고 휘핑해 뿔이 서는 머랭을 만들고 반죽에 3번에 나눠 넣고 섞는다.
4. 틀에 반죽을 3/5 정도 붓고 평평히 한 뒤 남은 반죽에 (1)을 넣고 섞고 짤주머니에 담아 바닐라 반죽 위에 올린다.
5. 가로 세로로 저어 무늬를 내고 160도 예열된 오븐에서 20~22분 정도 굽는다.
6. 유산지를 뗴어 내고 가나슈를 바르고 돌돌 말아 냉장실에서 2시간 정도 굳힌다.

20g Warm milk
10g Cocoa powder
5g Instant coffee powder
5 Egg yolks
10g Sugar
5g Vanilla extract
50g Vegetable oil
75g Milk
95g Cake flour
5 Egg whites
90g Sugar
Ganache (100g dark chocolate + 50g whipping cream)

@@achanwahn you're right! In my last vlog I tested a steamed bun recipe that i had to try so many times before I got the right ratios. But it was really satisfying and i enjoyed the process!

And it turned out that my shallow cuts weren't shallow at all 🤣 but the ganache and cold temperature managed too keep the roll cake together 😆

With the imperfect sections of the cake you cut off, you can crush them up, mix them in custard and add fruit. Delicious!!

Great recipe and overall pretty straightforward. Cake has that moist but non risen texture which isn't my personal favourite but my friends enjoyed (I prefer a lighter sponge). Ganache wasn't too sweet and complemented it well. I didn't get that dramatic of a hurricane look but I probably half assed it thinking I was ruining it, so I'd do it with confidence next time. Not a noticeable coffee flavour but that always happens when using coffee in chocolate recipes

Made this the other day! Tastes amazing and cake is really fluffy. Just so you know though, the ganache hardens in the fridge (if you don't want that)
And the chocolate ganache overpowers the coffee flavor , so if you really want a coffeeflavor I would maybe use a coffee cream or just whipped cream or mix some coffee in your ganache
Hurricane effect didn't really work but I did get a pretty pattern

I just did it, the cake is absolutely great. But I think next time I'd do it with some strawberries jam and cream in the middle. The ganash is a bit too strong for the very gentle taste of the cake. But it was great and very easy to make. Thanks. (we kind of ate more than half of it for brunch, just the two of us)

this looks very pretty! 😍 i'm interested to make this, but i'm wondering if you let the cake cool down first before spreading the ganache? since usually cakes like this when it's cooled tend to break during the rolling 😟
it seems like she added ganache right away ^^ in this case you'd want the ganache to be completely cooled down otherwise it might melt too much with the remaining heat of the cake
