      Prime cuts are as good as any beef. Rump and or chuck needs a little attention, but is still a very flavorful and satisfying meat. Elk that is. I have heard Moose is better, but I can't comment on that ... have had many elk from Colorado and wouldn't trade it for any other meat.

      @Shaquille O'atmeal I hunt public land, have been for about 20 years. We do well. I don't care about antlers so I buy cow tags. Learn the herds, find an area that has good numbers. Get on the Colorado Parks and Wildlife website where there is an abundance of information about big game hunting in CO.
      Don't let yourself get caught up in one area until you learn the land and how the elk move through it or live on it, be mobile and willing to hit different areas. Once you decide on a unit, try to talk to locals or even call a conservation officer who is assigned that area and ask them for information about the herd. Most are more than willing to come forth with the knowledge they have gained over the summer and or years.
      Once you setup, talk to other people in camps in the area. Usually they will know something about the local herd and help you out. Oh, and if there are not many camps around then you have either found a goldmine or there are not any elk around or it is rugged and hard to hunt.
      NW Colorado has a lot of elk. Most non-trophy units will require one preference point or less to draw a cow tag, then there are leftover tags too. There are four rifle seasons, a muzzle loader season and of course archery starts it all off during the rut.
      Hunting the migration in the last rifle season can be fruitful, but also cold, windy and snow .... which is why they are migrating by the way.
      Randy Newberg is a professional hunter who specializes in hunting public land in the west. He has a tv show and a forum .... fresh tracks TV and Hunt Talk respectfully. I think he also does UA-cam live every week or so. He has a lot of information and resources that he shares. Plus you will make friends on the forum who will be glad to help you as well.
      Hope that helps ... btw, aren't there elk in the UP? Probably a tough draw.

    My neighbor just scored a big elk, and because it's only him and his wife, he has extra meat. So I was the recipient of a beautiful gift! I didn't know how to prepare/cook it, so I searched UA-cam. And your video popped up first. I immediately saw that you're legit, so I paused the video, and got the cast iron skillet ready. Just as you dug into your steak, I dug into mine, which looked identical to yours. I thoroughly enjoyed eating along with you! This was my best UA-cam experience ever!     I always crush or chop my garlic cause thats how you get the oils out and that nice flavor from what i know his seem to be whole cloves uncrushed

    I'm not the biggest fan of venison. The best I've had it was in Edinburgh, Scotland. However, watching this video, my mouth was literally watering.

      Adam B Oh ok. You Googled it so it MUST BE right. I’ve been hunting for over 30 years and I’ve never heard ANYONE call elk meat venison. Leave the internet behind for a bit and come out to the real world. You’ll learn a ton more.

    Awesome lookin' elk steaks! I don't have much access to elk here on the East coast. I do LOVE cooking my steaks on cast iron and soapstone cooking surfaces though... definitely the best results!

    I’ve always loved buffalo over steer beef, but in ‘93 I bought 2 6oz elk steaks for $40, cooked them on an open hearth grill,,,& was totally blown away! It just doesn’t get any better.

    I brought home elk today and I’m wondering ‘what am I actually going to do with this…’….I knew where to go. It came out great. This man has an answer for pretty much anything that can go on a grill or in a smoker. Malcolm’s made me look like I know what I’m doing a bunch of times now.

    Hey Malcolm, great video, we get farm raised elk here locally and it is amazing, very lean and should not be cooked past medium rare for some of the leaner/tender cuts. I actually have two rib eye cuts on the bone I'm cooking up this evening. I know you like to do all your videos out on grills and smokers, unless I'm doing a bunch of other grilling, it would be a bit of a waste to grill in a cast iron pan over charcoal, I just use a portable induction burner when outside and then you can make an awesome pan sauce to go with your elk....red wine, chocolate sauce goes great with game.

    That ELK looks unbelievable! I'm jealous, honestly never had Elk and like another commenter says, I don't think we have much Elk up here in the North East, and at least I haven't seen it sold anywhere either, so I'd probably have to get with someone who hunts to be able to try it! Excellent job on those steaks Malcolm! Looks mouth-watering with that nice rich deep red color and then the beautiful sear. I ALWAYS use Rosemary and Sea Salt on my steaks, Garlic too is a great addition.

    Nice job Malcom, as usual. I am an avid hunter and my family LOVES venison. You are correct about proper handling of the meat to avoid "gamey" taste but something that is even more important, in my opinion, is that people need to remember that they are eating VENISON, not beef. Venison tastes like venison not farm raised, corn fed cattle.

    This was excellent. Only thing I did differently was cooked over stove (bad weather). Used a probe until they hit right at 140 and they came out awesome.

      It is. I've only had ground elk meat in chili and on elk nachos it was absolutely amazing. Next year is my first elk hunt though so I'll get even more.

    This looks great. Been eating Elk my whole life. Going to give this method a try for sure.
    Agreed, elk that has been well cared for is the key. 1. Wash the elk very well after the harvest. 2. Let hang 7+ days before butchering in proper cold cooler. Do not butcher with any bones still in. That's lazy butchering and ruins wild game. 3. Freeze the elk for one year before eating. (Trust me on this!!). 4. DO NOT speed thaw this in a microwave. 5. Best elk meat is from a cow and not a bull. Bull's can get very strong flavored to the point of almost nasty!!
