That looks amazing, that is my kind of soup. I can eat soup all year long, especially that Pasta e Fagoli. I actually have all the ingredients on hand, might make it this weekend. Your mom looks so sweet, I am sure she enjoyed it.
Gosh as a kid I didn’t appreciate this fine food. Pasta e fagioli, pasta e patate, pasta e piselli and pasta e broccoli. Guess what ? I make them all the time now. Great tutorial.

@@CookingwiththeCoias Thank you for yor answer, as for me I weigh the part of pork belly after having taking off the bones (I make ribs with them) and I add 30g of sea salt + 15g of Muscovado /1kg, give a little massage to the meat with that mix, put the meat with all the mix in a bag, seal it and set it into the refrigerator, turning the bag up side down every day for a week. After that I open the bag, wash the meat, dry it and hang it in the cellar for 2 days, and at last smoke it with cool smoke for 8 to 10 H. Don't hesitate to amend this. Your advice is precious to me. Thank You.
