I'm currently doing my PPL in a Pipistrel Velis Electro. It's a fun plane to fly. :)
Battery density is pretty much at it's maximum tbh. In 30 years we have maybe gained 20% more capacity /kg. It's a chemical thing, there is no way around it.
Also the more you increase density, the worse the safety becomes. Litiums are basically armed bombs and it shows when they get into an accident.
