  • Going thru my pantry I found a can of carrots that was starting to rust. Time to open them up and get them in the freeze dryer!

    The rest of the weight was water in the can.
    I would divide by two cups per bag and not by weight. Two cups per meal for two people is about right.

    Happy New Year John. Do you have any New Year traditions? We always do pork and sauerkraut. My Mom’s tradition (other than pork and sauerkraut) is to hide her wallet outside with a little money in it so she’d have money in it throughout the year (no idea where she learned that one, lol). I was always afraid some critter would do a grab and run with it 😅. She always called us on New Year’s Eve to remind us to hide our wallets, good memories ❤.

    Super excellent vid John! I'm doing a ton of fresh carrots right now. Found a pretty good deal on nice sweet juicing carrots. I'm doing Slices, dices and shreds, that way I have some use options when I need them. One think I noticed carrots do take a little longer to rehydrated.. but not that long.

    I am currently doing a #10 can of diced tomatoes. I didn’t put the juice in with this run but in a future run, I am going to see what comes of freeze drying the juice from the can. I have a few more cans of tomatoes, corn, green beans, and peaches to process over time. The freeze dryer stays busy, for certain. 😊

      more flavor by freeze drying the juice. It is worth the time in the freeze dryer.

    Happy New Year John! Thanks for this video. I have always wondered how canned, then FDed veggies would work. Now and then they are at my Walmart, along with green beans and whatnot.

      Reconstituting they are a little soggy but still good. I do frozen and canned veggies.

    Hey there, John! Watch these over time. I’ve seen a few FDers who’ve noticed FD carrots TURN WHITE when they age even a little bit.

      Cant say that I noticed it. They did pale a bit in the freeze dryer, We will have to check over time. I pack in Mylar but even if they do fade I am sure they will taste just as good!

      @@amy3458they do turn if you use jars. If you use Mylar, they stay nice and orange.

    Good luck with carrots, Everybody!! All my FD carrots turned white after a couple of months in vacuum sealed jars. Thrive Life, the leading FD food company, does not even sell FD carrots, because they turn white. Theirs are all dehydrated.

      Storing in a jar is probably your problem. I am going to share a link to a video that I made in August 23. It is Japanese Curry which had carrots in it.       My home dehydrated carrots lose color as well. I use them in soups and they still taste good.
