- I love to get frugal with what we have on hand and create some fridge clean out meals before fully restocking. I did end up getting a chuck roast, some produce, and some fun things to make snacks with (I had my heart set on a few recipes). This week is all about comfort food and delicious meals the whole family loves 😋

Chicken Sandwich (McDonalds or Wendy’s Copycat)
Ingredients
1 lb Chicken Breasts
1 Tbsp White Vinegar
1 Tbsp Garlic Powder
½ tsp Paprika
1 tsp Salt
¼ tsp Pepper
2 cups Corn Flakes
½ tsp Pepper
½ cup Flour
2 Eggs, beaten
4-6 Buns
Optional Toppings: Mayo, Lettuce, Tomatoes, Pickles, Mustard, Hot Sauce, Ketchup, BBQ sauce, etc.
Instructions
1. In a blender or food processor, blend the cornflakes and pepper until very fine, and set aside.
2. Wipe out the food processor, and then blend together the chicken, vinegar, garlic powder, paprika, salt, and pepper until fully combined and finely chopped. Roll out into 4 to 6 patties, place on a wax paper lined plate or sheet tray and flatten to about ½ inch thick, or to desired thickness. Place in the freezer for 1 hour.
3. Place flour, eggs, and cornflake mixture on separate plates or in shallow dishes.
4. Place each patty in flour and lightly coat each side. Then place in eggs and coat on each side. Then finally place in the cornflake mixture on both sides.
5. Air fry, bake, or deep fry the patties until golden brown, crispy, and cooked through to at least 165° F internally. If baking, bake at 425° F for 25-30 minutes, or until cooked through.
6. Toast the buns and top with cooked patty. Add any optional toppings, if desired. Serve and enjoy!

Copycat McDonald’s Snack Wrap
Ingredients
2 cups Cornflakes
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
1 tsp Paprika
1/4 tsp Pepper
1/2 tsp Salt
1 tsp Avocado Oil
2 Eggs
1 Tbsp Vinegar
½ tsp Salt
1 lb Chicken Tenders, or Chicken Breasts sliced into strips
1 cup Cheddar Cheese, shredded
Lettuce
Optional Topping- Ranch, Hot Sauce, etc.
Instructions
1. Preheat oven to 350° F and spray or oil a baking sheet.
2. In a large mixing bowl, combine cornflakes, garlic powder, onion powder, paprika, pepper, and salt, crumbling the cornflakes with your hands into smaller pieces. Add 1 tsp Avocado Oil and mix until combined. Set aside.
3. In a small mixing bowl, whisk eggs with vinegar and salt. Set aside.
4. Pat the chicken dry. Place the chicken in egg mixture to coat and then coat in cornflake mixture. Place chicken on baking sheet and spray with avocado oil.
5. Bake at 350° F for 25-30 minutes or until cooked through to 165° F internally. Let rest for 5 minutes before serving.
6. Wrap chicken in tortillas with lettuce, cheese, and any additional toppings desired. Serve and enjoy!
For faster cooking, air fry for 8-10 minutes or until cooked through to 165° F

I love eggs with fried onions and mushrooms. Blend it with egg yolks and then stuff the eggs.

I love this style video where you show your shopping trip and then show us how you use those items. Wish you did all you videos like this. Other video titles are confusing bc you say "what I bought and what I'm making" but never actually take us to the kitchen.?!?! Just my opinion. And you absolutely do not buy too much junk food sounds like that person only watched a video that your husband has come with you on your shopping trip lol. My trips tend to go the same way if my kiddos or hubby comes with. Thanks for all you do. 😊

This family loves potato soup and deviled eggs. Pot roast is always a comfort food but because of the price we wait till we can find one on a great sale.

My deviled egg recipe is 6 hard boiled eggs, 3 tbs mayo, 1 tbs sugar, 1 tsp white vinegar, dill relish, salt and pepper.... they are THE BEST... topped with paprika.... won't disappoint.. I promise. Everyone asks for my eggs at any gathering.

For the chex mix: add multi grain cheerios or the honey nut cheerios!! It makes it so good and balances the salt/garlic!!! I add mine about half way through baking because they can burn alittle if you arent careful.

Thanks for the recipes and I saw a long time ago someone always put a little bit of very softened butter in with their deviled eggs and the mayonnaise and the mustard and I've done that and it just adds a creamy something to it

instead of mustard in deviled eggs, I use ketchup. Pretty orange color.

I kinda agree that the title a bit misleading. I don't have any criticism of Laura,she's so great. I do wish this was a true what- I -have -on -hand video. Maybe do one once a month or so.❤

Your intro and your video don't match. The intro says that you are making meals and snacks using what you have but your video is a shop with me. Not sure if you noticed or anyone else pointed it out.

It’s definitely a bit of shop with me and using a lot of what we had on hand. I only picked up a few things at the store to complete some recipes I really wanted to make but I normally don’t shop when I’m doing fridge-clean out recipes. So sorry about the confusion! I’ll be sure to work on my intro for the next one 😄
