Love how varied your shopping hauls are ! I have said it before and it bears repeating , when other channels do emergency, low income hauls they rely on carbs and often leave out veggies and fruit. Your $68 or less haul for 4 people is includes all food groups. The Salmon bowls look delicious! . Great video
Thank you so much!! I really appreciate that! This is exactly how I shop every week on a budget. I shop my pantry first, pick up things on sale (especially the sale produce items), and then stick to my meal plan ☺️ It has helped me adhere to a super small budget. Most weeks I’m spending $30-$50 at the store for the 4 of us. I think it’s so important to show these types of meal plans to help inspire people to use what they have on hand ☺️
I agree that many ' low budget' meals include too many processed foods. These recipes offer a variety of vegetables, protein, fruits, & meals kids would eat! Thank you, Laura, your hard work is helping so many!❤❤
Your style of scratch cooking is right up my alley. And just when I feel like there can be nothing new or creative left to try, you have FRESH ideas! I love it.
Your ingenuity to using what you have on hand is brilliant. I would say you are definitely battling this high inflation to its fullest and you're doing a great job just found you today and I subscribed.
Sometimes accidents are happy little accidents. After the taco seasoning spill, I would have just added the black beans and seasoned them up with the taco seasoning as well.
Oooh that’s brilliant! It turned out to be perfect because the tofu needed the seasoning lol 😂 Thankfully I make the taco seasoning myself and it wasn’t much salt
Thanks for the great ideas! These recipes were easy to modify to plant based and I had everything in my pantry and fridge so no spend week for the win!
Love your ideas!! Another variation with the salmon is to do nab some frozen Aldi broccoli, carrots, cabbage, and onions to do a stir fry as your side on that rice. ☺️
I really need to try the meatless meatloaf!!! It looks great and I love lentils!! I’ve fooled my grandkids plenty of times substituting lentils for burger😂😂
Yes!!! I can’t wait to hear what you think! I’ll have to try substituting the lentils instead of ground beef in other things and see what my kids think!
THicker., heavier bread fills up little tummys fast! That looked delicious. Love how many different recipes you made and how varied the meals were. Impossible to tell this was a week's worth of meals on a budget!
Thank you so much!! That’s so nice of you to say! The bread was definitely filling and perfect for breakfast or a hearty snack. Even my kids enjoyed it, so it was a huge win ☺️
I'm glad I found your channel! Great ideas and well done, nice to see whole ingredients used and not processed. Definitely trying the bread, the lentil loaf and the southwest rice this week. Thanks!!!!
I was saving your video for when I have more time and somehow made cabbage steaks in the meantime, haha 😁 All of these look very delicious and well balanced, I'm definitely taking notes!
@@LauraLegge They‘re very enjoyable! I‘ve been trying to consume less meat lately, can‘t say I regret it - garlicky and grilled, what‘s not to like! 🙂
Can you post your granola bar recipe? It’s difficult for me to understand the proportions of the different ingredients you used by just watching through video. Thanks for all the meal ideas!
Yes of course! Here’s the recipe for you! ☺️ Chocolate Peanut Butter Granola Bars Ingredients ⅔ cup Peanut Butter or Any Nut Butter ⅓ cup Honey 1 tsp Vanilla Extract ⅛ tsp Sea Salt 2 cups Rolled Oats ⅓ cup Mini Chocolate Chips Instructions 1. Line an 8x8 container with parchment paper and set aside. 2. In a medium bowl, mix together the peanut butter, honey, vanilla, and salt until completely combined and smooth. 3. Add rolled oats and mini chocolate chips and stir to completely combined. 4. Pour into prepared 8x8 dish and use another piece of parchment to press the mixture evenly. You can use a measuring cup to smooth and press the mixture to get an even layer all the way to the edges. 5. Cover and freeze for 1 hour. Remove to a cutting board and slice into 16-24 pieces. Store in an airtight container in the refrigerator for up to 1 week.
I've made granola bars before. Think I will again. I have so many oats I need to use up. But I think I'll add some hemp seeds to mine too. Those are good.
I really like your last dish in this video. I have a recipe similar to it. I take a can of black beans, can of tomatoes, a can of corn, and my seasoning like minced onions Italian seasoning to a pot or even a bowl and microwave it. I use it as a dip or even a main dish that I eat. I may try it with rice next time. I like that you added an avocado to it as well.
Yum!! That sounds amazing!! I’ll have to try it! I’m making a super simple bean and corn dish in a video I’m working on right now too. I love how versatile those ingredients are!
Oh interesting! The one near me has 1lb of Jasmine rice for $1.25 but nothing else 🤔 I have a feeling my store doesn’t have as many options as some of the others
@@LauraLegge I live in a rather large city/area, which is extremely helpful for variety, but not always good for keeping prices low. This is a plus for Dollar Tree stores.
@@yvonnepalmquist8676 I adore dollar tree! It’s one of my favorite stores. I hadn’t done much grocery shopping there but I went looking for a few things recently and I was sad to not see things like oats and lentils, which I’d seen in some other people’s stores. I think mine is just smaller but I still love it ☺️
I use a food processor but you can also use a blender! Mine is a 3.5 quart KitchenAid - I have it listed in my storefront and my UA-cam shop if you’d like to check it out ☺️
I would be cautious of purchasing Dollar Tree rice. “Cheap” rice (in fact all rice) can have a ton of insecticides. Always do three rinses until the water is clear. Love your channel!
@@LauraLegge I would probably add more honey next time or maybe a little bit of sugar because I like more sweetness; however, It was really yummy! Why not just oil the cabbage cooking sheet, opposed to oiling the cabbage top only to turn over to oil?”.
The oil and seasonings are able to get through the layers of cabbage this way so there’s flavor in every bite ☺️
