INGREDIENTS
For the roast beef
1 3-pound (1.4kg) eye of round roast or top round or rump roast
1 1/2 tablespoons (15g) Diamond Crystal Kosher salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon black pepper
For the jus
1/4 cup (60ml) dry sherry
4 cups (1L) no-sodium beef stock divided
4 tablespoons unsalted butter
2 large onions thinly sliced
1 1/2 tablespoons flour
2 teaspoons Worcestershire sauce
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
For the subs
6 sub rolls
1/2 pound (227g) swiss or provolone cheese

Cheap slicers are great, but cleaning them thoroughly is a pain in the *ss. Even when they look pristine, the possibility of listeria an issue you ignore at your peril.

It's basically French Dip w/ garlic vs your onions + salty mozzarella vs your cheeses & hot giardiniera for the WIN!
Italian bread is dryer than French bread, but DIP it in JUICE & it's all good... hope you do Italian Beef soon!

My parents moved to long island after I graduated from high school and my younger brother went through school in Smithtown. I moved there for a while trying to find myself and worked at all sorts of delis and pizzerias. Watching you guys always brings back the greatest memories of my family. I really appreciate your no nonsense approach to the techniques of cooking. Things like putting the baking sheet on a burner with a little beef stock to deglaze, cutting the fat cap off to use in the onions, etc., are priceless! These are the kind of things that other ‘chef-y’ shows don’t do. You’re the best!

Bro, i love you, the way you explain things and talk through the process is very neurodivergent friendly and I really appreciate this.. I cook, I cook very well, but I don't follow recipes because they get confusing, and then videos don't follow the recipe properly and so i get lost.. Not only do you explain things like a normal person, "You can stop here but id keep cooking them." "Add the flour, you don't have to but it helps"... little stuff like that, plus explaining when you personally missed something, makes a huge difference mentally for us.. Nothing like clear concise directions.
I always salt meat and put on a rack in fridge, overnight. It's an easy way to air dry your meat, salt it, without going too crazy on dry aging. Best tip ever to up your cooking game. I am single and bought a 1/4 sheet pan with stainless steel grid rack. I love it. Use at least once a week for something.

Look at y'all hitting that 1M mark! Very well deserved, IMO. I used to manage a tea room and I did all the cooking. I used bottom round roast and I used a commercial salt, pepper and garlic seasoning that I seasoned it with. Those were the best sandwiches. It's surprising hard to find a good French Dip where I live. I'd love to have a meat slicer but can't seem to pull the trigger. The best for slicing tomatoes too!

Congrats on your million! I bought my husband a meat slicer on Amazon for Christmas. He loves to make homemade jerky, especially during deer season; however, like you mentioned, it's also useful for other things. Great investment. Queens native but living in PA for almost 20 years now and I still call it a hero here in "hoagie"country lol

Now this is how you do a French Dip! So many times I order these sandwiches out, only to receive a sad looking roll with a couple of pieces of deli roast beef on it. Love it with the Swiss cheese and caramelized onions! Nice job.

I just bought that lil knife sharpener, diamond salt, and the lil salt box! I also recently bought a diamond-embedded sharpener which you correctly pointed out that a honing blade is only used to take off the burr and does not sharpen your knife!
I did two years of wood working at a trade school and I also have some fancy Japanese water sharpening stones that I never use.
Also bought a second lil knife sharpener for my friend in east Texas! He is a hunter and is letting me get my Amazon deliveries to his house! Thank you Jimmy in Jefferson, Texas!

This is one of my favorite sandwiches. I remember the first time I ever had a French dip, and it was so good that I wanted to learn to make it myself, and that's how I got my love of cooking.
I bought a used Hobart slicer from a retired farmer for 1K. No regrets. I make my own deli roast beef using the same cut you have

Regarding deli slicers: used ones are affordable via auctions or restaurant supplies or FB Marketplace when places upgrade or go out of business. But you got to have the room for those beasts. And as someone else commented, you gotta know how to properly break them down for cleaning. Congrats on the 1M! 🎉

I bought a meat slicer, I like to make roast beef and pastrami at home…just like yours. Eye of round is amazing! Buy a corned beef and make your own pastrami. Having a slicer is so great…making your own deli meat is so nice.. don’t buy processed deli meat…make your own so easy! Thanks for the recipe….but a meat slicer, you can afford it now with 1 million subs! ❤❤❤❤

My Dad (RIP) loved this type of sando. I tried it once but I'd rather put horseradish on it than dip.
As someone who uses Japanese woodworking tools, Shapton are amongst the best you can get. Plane blades and chisels are fairly easy to sharpen freehand as you have a significant blade bevel to work with. Chef knives are a different proposition as there is such a small bevel to work with so you really need a sharpening system with guides.
I would have thought if you can fine a 6" mandolin, you could use that to get thin cuts? The other suggestion is rather than using a sharpening rod, use a leather strop with some green compound. The strop will remove the burr but isn't destructive to the edge angle.

Gotta dip the meat in the au jus before you put it on the bread. It slightly warms the meat, provides more flavor, and the bread soaks up the jus.

I love French Dip. One of my favorite sandwiches. When we lived near Houston, TX we used to go downtown to Katz’s Deli and I always got their French Dip! So good! I could just drink the au jus!

I make French Dips about twice a month, I don't even cook the Meat, I use Tri-Tip and put that in the freezer for about two hours and I have a small inexpensive deli slicer ($120 ish) and just slice as thin as possible. If I have time I'll caramelize the onions in the pot and then add the Broth and W_shire Sauce a splash of red wine a dash of ground thyme and heat until it starts to wisp steam, and add the beef a little at a time and in a few minutes you'll have easy French Dips and the best tasting Au Jus.
