To save even more time to sear pieces of protein, instead if doing it the IP in batches, I do it all at once under the broiler on a foil covered baking sheet, add some oil, salt n pepper, mix, single layer, broil, flip, again broil done. Works for ribs, cut up roasts, oxtail, chicken pieces etc.

I can't help but think, instead of rice I am going to boil up some shells or other hearty pasta for the rest of that amazing mushroom sauce. Maybe rapini separating the ribs and pasta on the plate as a color, texture, flavor contrast.

At Trader Joes tonight couldn’t remember if I needed the spinach and mushrooms for this recipe or for the bean soup recipe I looked at on your channel. Looks like it’s a trip to the Giant to pick up some short ribs tomorrow (bought the spinach & mushrooms at TJs)
I'm glad you said searing is optional. My mom used to make a lot of stews in her pressure cooker and never seared anything and the meat was always super tender! It's a step I'll gladly skip.
Great idea, but I'm not going there with the cheese combo with cream and cornstarch, major psychological aversion. I won't even eat a cheeseburger. Love the rib idea with coarse onions and a ton of mushrooms. Might try it with beer or red wine, wild mushrooms, and tomato. But great info on cooking shortribs. I've got a load in the freezer, also about 6months old. Thanks!
The spinach should go in right after removing the meat. Fresh spinach wilts and cooks very fast. Pressure cooking spinach for 45 minutes is extreme overkill.
I am new to the instapot..... I have the 8qt instapot, when following your recipes do I need to make cooking time adjustments due to having a larger pot? I tried making your baked beans and the beans were not cooked all the way. Which by the way the flavor was delicious!
I will add all the wine you’re suggesting, even more if appropriate, but what can I use in substitute for mushrooms? Sorry but they have a weird texture and taste like fungus and dirt.

Short ribs are pretty pricey in my neck of the woods. But I could make a pot roast with this method, subbing chuck roast.

Sutter home wine has little bottle 4 packs at Walmart. They are perfect for cooking and affordable.
