You guys would love Louisiana. I’ve lived here my whole live. Grew up close to New Orleans and live in Lafayette now. New Orleans is definitely the place to party but if you want real Cajun food you have to travel to Lafayette. The food here is the culture. You haven’t lived until you’ve had boudin and steen’s cane syrup. C’est Bon.
You need to make a chicken and sausage gumbo or some nola style red beans w sausage 🤤 OOOHHH and some Poboys. A fried shrimp poboy with some homemade tartar is my fav but you could also do a debris poboy
Don’t use Old Bay and Slap ya Mama if you have any concerns about too much salt. They are both HEAVY in salt. What makes Old Bay taste great is celery salt, plain and simple. Just use Slap ya mama and celery salt.

The starch in the water helps emulsify the sauce to make in nice and creamy!
