    #### Ingredients:
    *For the Dough:*
    - 2 cups whole wheat flour
    - 1/2 teaspoon salt
    - Water (as needed)
    - 1 tablespoon oil or ghee (optional)
    *For the Potato Filling:*
    - 4 medium potatoes, boiled and mashed
    - 1 small onion, finely chopped
    - 2 green chilies, finely chopped
    - 1 teaspoon grated ginger
    - 2 tablespoons chopped coriander leaves
    - 1 teaspoon cumin seeds
    - 1/2 teaspoon garam masala
    - 1/2 teaspoon turmeric powder
    - 1/2 teaspoon red chili powder (optional)
    - Salt to taste
    *For Cooking:*
    - Ghee or oil (for frying)

    *Step 1: Prepare the Dough*
    1. In a large mixing bowl, combine the whole wheat flour and salt.
    2. Gradually add water and knead to form a soft, pliable dough.
    3. Optionally, add 1 tablespoon of oil or ghee to make the dough smoother.
    4. Cover the dough with a damp cloth and let it rest for 20-30 minutes.
    *Step 2: Prepare the Potato Filling*
    1. In a mixing bowl, combine the mashed potatoes, chopped onion, green chilies, grated ginger, and coriander leaves.
    2. Add cumin seeds, garam masala, turmeric powder, red chili powder, and salt. Mix well to combine all the ingredients.

    *Step 3: Assemble the Parathas*
    1. Divide the dough into equal-sized balls (about the size of a golf ball).
    2. Roll out one dough ball into a small circle (about 4 inches in diameter) on a lightly floured surface.
    3. Place a spoonful of the potato filling in the center of the rolled-out dough.
    4. Bring the edges of the dough together to enclose the filling and pinch to seal.
    5. Flatten the stuffed dough ball slightly with your fingers.
    6. Roll out the stuffed dough ball gently to form a paratha (about 6-7 inches in diameter). Be careful not to tear the dough and expose the filling.

    1. Heat a tawa or a griddle over medium heat.
    2. Place the rolled-out paratha on the hot tawa.
    3. Cook for 1-2 minutes until bubbles start to form on the surface.
    4. Flip the paratha and apply ghee or oil on the cooked side.
    5. Flip again and apply ghee or oil on the other side.
    6. Cook until both sides are golden brown and crispy.
    7. Repeat the process with the remaining dough and filling.

    1. Serve hot aloo parathas with yogurt, pickle, or any chutney of your choice.
