So... Vodka=alcohol+water. We fry/boil it, which means the alcohol is going out. So why I can't add just a water?

The alcohol is to "evaporate" the excess oil.... Not sure how, but it removes excess oil

I think it would be so much better without Vodka. Vodka doesn't taste of anything but alcohol. I used to be an alcoholic who drank straight Vodka and could be sick thinking about it. What flavour does Vodka add? I get wine sauce, whisky sauce, beer batter, Brandy sauce but I always just drank Vodka because it was quick and basically tasted like hand sanitiser. Basically I could be drunk within 5 minutes. 😊

Yes, absolutely. I would add a little bit of butter and less oil if you're making marinara
