Hey mate, southern born and raised American living in Australia. Been craving some good ole american made BBQ while aussies make amazing bbq here its just not the same especially if your a vinegar based sauce lover like myself so i bought an offset smoker and been making it myself. Agreed. Baby Rays sauce is fine, especially for its price (it is frequently on sale at my supermarket), but its sugar content is too high for my taste. Stubbs BBQ sauce is better balanced, IMHO.

For store bought sauces and only for pork BBQ I use Bone Suckin' Sauce. They are out of NC and it just seems to work so well with pork. As a quick rub I like Everglades seasonings BBQ rub. Not a lot of sugar so they don't burn and just a wee bit of heat.
Maybe you can do one more experiment with the precooked/smoked Costco meat. Heat them up on your offset grill to see if it improves the taste and tenderness.

I might be naive since I don't watch many of these, but it certainly seems like the goal of these videos is just to say how much better the things he cooks are, as if it is a comparison. The person who is buying pre-cooked ribs is unlikely to be the person who spends hours and hours smoking BBQ every weekend, but why bother looking at it from the perspective of what the best pre-made options at the same price level/effort might be.

Well that's refreshing after the brisket video lol, it's nice that there's actually an option like this that's legitimately worth buying(in the appropriate circumstances)
Now I'm wondering if other reheating methods could take them up a notch; sous vide, grill, pellet smoker...
I haven't purchased the Costco pre-cooked ribs. But I used to buy the Lloyds pre-cooked ribs you'll find in a typical supermarket. They were always undercooked. Which is to say, they were cooked at too high of a temperature for the minimum time to meet FDA safety requirements. I would always cook them in a 280 degree oven for another 1.5 to 2 hours to get something close to acceptable tenderness. Also, I agree that spareribs are better than baby back ribs. Especially when you consider the cost of each.
I get frustrated with these places that sell prepacked ribs. Like Costco they just drench them in sauce. Sell them without the sauce or at least put them in a package so we have the option to add the sauce.
It is like comparing apples to oranges. Mass production to home cook.

Question?. If there are any books on bbq you recommend. I can bbq but I want the science and the correct terminology. I believe it will help hone in the craft. Thanks for all ya do and all you teach!

I also shoukd say that im rooting for jeremy in that i think his method is definitely better and ive used his method to impress folks for a few years.

You say Baby Rays are your favorite. Have you tried Head Country yet? Made in Ponca City, Oklahoma. I think it's much better than Baby Rays.
I know jeremy doesmt really look at the comments... not faulting him but you can cut sweet baby rays with georges vinegar bbq sauce with a little butter and it is such a great sauce for ribs and chicken. Try it out! Im pretty sure georges is NC based.

I just fixed these ribs the other night. I know it would never compare to your ribs, but for a quick heat n eat meal, I really liked them. Their sauce is OK, but I I think next time, I will scrape off the sauce and cover it with Hickory Sweet Baby Ray's. Mine were perfect as far as tenderness. Firm but all came off the bone easily.
I did mine on my Weber gas grill but next time I will use my pellet grill for a little more smoke flavor.
That's what I was thinking, off I don't have the 4 or 5 hours to commit to it? I'll but the pre cooked and heat them on the pellet smoker.
Nice video as always. You could make your own sauce you know. Lol. The package said they were hickory smoked and you are saying they were probably liquid smoked, that's a bit of false advertising. For $15 I can say you got what you paid for since it's glorified leftover BBQ, and BBQ that you didn't make yourself. Ribs are so much fun to make, it's a very good start when making BBQ. At most, 6 hours of total cook time. It doesn't take an entire day like a brisket or pork butt (pulled pork) which take at least 12 hours. You should really try Sams Club when it comes to meats, especially baby back ribs. You get 2 to 3 full slabs in a pack and they are super thick and meaty, even after trimming.

I was thinking about Jeremy Yoder's assertion that he likes briskets in the 10 to 11 lb range because of the surface area to meat ratio for your smoke and bark.
Has anyone cut a larger brisket (eg 20 lb-ish) into two or more smaller pieces to improve the smoke and bark ratio? Is it worth it?

I wish SBR didn’t have HFCS
They most likely smoke the ribs hotter and faster, so a hotter smoking spending less time in a less smoky chamber accounts for the small smoke ring. And hotter and faster means less time for the collagen to break down in the meat and become more tender. They likely do this to save time and money by being more fuel efficient.
Maybe try warming the ribs on a smoker? Hahaha

I think I would do the Costco ribs at 250 - 275 rather than 375. Just like you would on a smoker.
I still would have covered in foil.

I love ribs. I don’t have a smoker so the pre cooked ribs are a good option. Costco had some cooked ribs near the rotisserie chicken. They were expensive and I didn’t like them.

Heres a dumb question - a lotta hate on the baby backs and from a meat standpoint, it makes sense. BUT the st louis style has that tendon on it that I cant stand. Do yall just naw on that and then spit it out??

What if you heated the costco ribs to 190 to 200. Then, you would have separation from the bone.
Also i should say that jeremy should do a rack and after rest refrigerate and then reheat just like the costco. Just to see how the smoke flavor lasts in the cooling
To be fair a lot of people (especially women) dont like a heavy smoke flavor. I love it but have heard people say it taste like eating firewood 😆

Your rib looks better. I have tried the precooked ribs from Costco and the ones from Corkey's they are just not as good as the home cooked ribs.

I'm getting on in years now, and undercooked meat jerky, etc sticks really badly between my teeth. I would MUCH prefer your ribs.

I have loved watching you content for years and its been great, but on the precooked rib you took a bite from the side of the rib and said you didnt clean the bone you then took a bite from your rib from the top and bragged about cleaning the bone not and expert but im thinking not a true test from that aspect.

I make awesome ribs on my Weber kettle grill. About five hours at about 250 with lots of smoking chips. Perfect!
$250 weber kettle will blow those out of the water

Weber Kettle or Pit Barrel Cooker is all you need. Thats what "real world" people that are in the know use. Harry Soo has won a ton of awards on a $300, 18 inch Weber Smokey Mountain.
