- OLD SCHOOL CHICKEN AND DUMPLINGS
This is my moms absolute favorite dish
its complete made from scratch
Recipe :
For dumpling base
2 cups diced onions
2 cups diced celery
2 tablespoons salt
1 tablespoon black pepper
1 whole chicken(cut up)
1 quart water
1 cup whole milk
1/2 cup melted butter
1/2 cup flour
for dumplings
3 cups flour
4 oz butter or shortening
1 tsp salt
1 tsp black pepper
1 cup butter milk
combine dry ingredients in mixing bowl
cut in butter or shortening
add butter milk and mix until combined
pour batter onto flour surface and flatten into 2 in dough
with pizza cutter or knife
cut into 12-20 (4in) squares and set aside
in large stock pot or boiler add chicken,onions,celery,salt,pepper,
bring to a boil and then simmer until chicken is done
remove chicken from liquid and cool
after chicken is cool ,remove meat from bone
add milk to pot and bring to simmer and add dumplings slowly and carefully and cook until dumpling are done and firm
combine melted butter and flour mixture to liq and cook until thickened
then add chicken back to pot and enjoy

My mom would have been 88 years old next month. I lost my mom in 1972 as a small child. My family reminds me from time to time that I have some of hers ways. To me, it has always been about honoring my mom and what limited amount of time that I got to know her.
I always remember Mama 1927-2013 ❤...I will always remember the cooking lessons in the kitchen 🤗

Chef Jeffrey, I love your love for your mom. I had the honor of living with my mother for her last 8 years. She was healthy but had typical elderly challenges, like driving and memory loss. At age 82, she died of complications from a fall. At a certain age, you think you’re somewhat prepared to lose your parents, however, I miss my mother so much more than I ever imagined. It’s been 14 months and I’m still struggling daily. I’m an only child, with no children of my own, by choice, so not a lot of family to shift my focus. I can relate to your statement about your mom would let you know if it wasn’t right. My mom was the same way. She was a little 4’9” 100 lb firecracker, who did not mince words. She instilled in me a strong work ethic with a no excuses attitude. I’ve cooked regularly since age 9, and being semi-retired, I cook every day. My mom would tell me, “you don’t need to go to all that trouble” - but would come peek around in the kitchen to see what I was cooking. It could’ve been the most lavish, painstakingly difficult to prepare dish, and she would’ve preferred her favorite old school hamburger - just like the one in one of your video thumbnail pics - or a chili dog. Thank you for allowing this far too long personal commentary, and regardless of whether or not it’s read, it’s very helpful to me to write. Most importantly, thank you for sharing your recipes and these relatable tidbits and stories about you and mom. 🥰 🕊️🕯️
