- Hello, everyone! Today, I will show you one of my favorites - Tupig - grilled glutinous rice flour with brown sugar and coconut strips (I used macapuno), wrapped in banana leaves.
📌This is my own version of making tupig. This recipe is for the ones who can’t find young coconut in their area. Also for those who can’t grill with charcoal in their apartment…. This is for you. I hope you enjoy it. 😊😍

[Tupig, also known as intemtem or kangkanen, is a Filipino rice cake originating from northwestern Luzon, particularly the regions of Pangasinan, Tarlac, and Ilocos. It is made from ground slightly-fermented soaked glutinous rice (galapong) mixed with coconut milk, muscovado sugar, and young coconut (buko) strips. It is wrapped into a cylindrical form in banana leaves and baked directly on charcoal, with frequent turning. The name tupig means "flattened", in reference to its shape after cooking. It is popularly sold as street food in Pangasinan, particularly during the Christmas season. It is typically eaten with ginger tea (salabat).]

INGREDIENTS (for 12 pieces)
🌸 Banana leaves (frozen or fresh) ~ 12 pcs, 20cm width
🌸 Macapuno (coconut strips in a jar) ~ 1 Jar
🌸 Dark brown sugar ~ ¼ cup
🌸 Glutinous rice flour ~ 2 cups (215g)
🌸 Water ~ 2-3 Tbsp

Parang simpling suman lng sya pero iba lng tlaga ang gawa sa malagkit at iba rin ang bango pag nabalot sa dahon ng saging maaalala mo ang iyong childhood..ang mga gumagawa nito sa probinsya tulad ng de unang bibingka ay pambenta na kasi nga mga lola natin na matiyagang gumagawa nito ay matatanda na pero nakakamiss ang mga pagkain na ganito..aayy manang adu man nalagip mon..hehe..thanks for sharing..

Pwede rin po pero hindi na sya magiging lasa nung original na recipe

Pwede mo po sya i deretso sa pan. Lagyan lang po ng konting mantika. Para syang pancake pag naluto. I tried once masarap pa rin kahit walang dahon ng saging 😊

Pwede po ninyo i replace ng Coconut milk yung tubig. Dagdagan nyo lang po para di masyadong malapot. Mas magaan po kasi sa panlasa kung tubig lang.

Pwede b kahit walang banana leaves?
Pwede po... Pwedeng i deretso lang sa kawali na parang pancake. Need nyo nga lang po ng coated pan para di dumikit.

Looks too gummy for me, I think the mix should be more loose, more water or coconut milk so it’s softer. Just my opinion.
