This actually helped me a lot even though I am making a completely different shotgun. The Ithaca 37 is both a more simpler and harder to make. I Do not have to think about the covers for the shell chambers, but the the stock pad and pump is very detailed. However, While following this video I earned the confidence to problem solve and make the parts different from the M870, so thank you!
maybe its not important in low poly but the parts where the butt is connected to the handle is tricky, how to make the butt less smooth, the bottom of the handle sharp, and the main body smooth again? and connect them keeping the square topology? because when you look at the reference it doesn’t have the same bevel, it changes

When trying to create borders on the stock at 2:35 some vertices move inward while on other points it moves outwards, making this step imposible to me. what is the problem and how can i fix it?

in my opinion shotguns are the easiest gun types to model in blender

I find it easier to model shotguns than handguns, less complex geometry basically just a bunch of tubes whereas a hand gun is 4 or 5 different shapes

How do you turn off symmetry without loosing the shape of the model?
you have to apply symmetry modifier to keep the shape

It should work, but you have to rig it for animations.

check if you have negative scale on any of your objects that might be the reason why, if yes, ctrl a and apply scale
Apply everything and recalculate normals
