Why we need Field Level Security if we can do changes through Permission sets @Salesforce Hulk or Anyone else can answer?
Permission sets only add to the access (give more access) that is provided by Profiles.... In these profiles we can setup object and field level permissions for each object and field to grant view, edit, create or delete action options for records....
Field level is when we completely want to hide one or more fields from some set of Users.... Permission sets are totally different from field security settings, they just give a particular user more access than what is granted by that user's profile!

What is Application level security?
There are only 4 levels of security:
1. Organization Level Security
2. Object Level Security
3. Field Level Security
4. Record Level Security
However in general applications level security will be including object level security through which we can give edit,create permission on an object or an app.
