This stuff is GREAT! When we go hunting in Biry, someone always runs over to Hondo to pick up a coupla pounds. No worry about consuming it in one day, it's gone inna hour. And Jess is eating it correctly, saltines and Lone Star Beer ( LS compliments the flavor the best, we've done the research ) !!! 🥰😁
Love it we lived in Hondo for a time and would eat this wonderful stuff from the butcher shop in Castroville. We are just east of Dallas these days I miss this stuff . I’ll have to make me some. I appreciate you posting this great memories!
Thank you for doing this Jess. So many people are repulsed by the idea of eating raw beef, and think that is one way ticket to the hospital or morgue. The reality is many cultures eat raw beef. For example, the French, Turks and Ethiopians all have dishes that consist of raw beef. None of these countries have epidemics of people dying as a result of eating raw beef. As long as the raw beef is fresh and purchased from a reliable source it is fine. Its funny that the same people who cringe at the sight of eating raw beef don't even blink an eye at the thought of eating sushi.
It's been a MidNorthWestern tradition for over a hundred years to have this but it's called cannibal. Every local deli has it as a snack to eat while you wait in line.

We grew up eating this on rye bread and sliced onion. We called them cannibal sandwiches in WI. It was served at parties.
Crack a raw egg on it and you got a dish we eat all the time across the pond (oh and take out American Cheese, whatever that is) looks awesome
