ಹಾಗಲಕಾಯಿ ಗೊಜ್ಜು ಮಾಡುವ ವಿಧಾನವನ್ನು ನಮ್ಮ ಅತ್ತೆಯವರಾದ ಶ್ರೀಮತಿ ಲೀಲಮ್ಮನವರು ಮಾಡಿ ತೋರಿಸಿದ್ದಾರೆ. ಇದರಲ್ಲಿ ಅನೇಕ ವಿಧಗಳು ಇರಬಹುದು.
ಆದರೆ ಮೇಲಿನ ವಿಡಿಯೋದಲ್ಲಿ ತೋರಿಸಿರುವ ವಿಧಾನವನ್ನು ಸುಮಾರು ದಶಕಗಳಿಂದ ಅವರು ಅಳವಡಿಸಿಕೊಂಡಿದ್ದಾರೆ. ನೀವೂ ಮಾಡಿ ನೋಡಿ.
ರುಬ್ಬಿಕೊಳ್ಳಲು ಬೇಕಾದ ಪದಾರ್ಥಗಳು
ಉದ್ದಿನಬೇಳೆ 1/2 ಚಮಚ
ಎಳ್ಳು 1 ಚಮಚ
ಜೀರಿಗೆ ಅರ್ಧ ಚಮಚ
ಮೆಂತ್ಯ ಕಾಲು ಚಮಚ
ಒಣಕೊಬ್ಬರಿ ಒಂದು ಕಪ್
ಹುಣಸೇರಸ 1 ಕಪ್
ಒಣ ಮೆಣಸಿನಕಾಯಿ 8
ಎರಡು ಹಾಗಲಕಾಯಿಯ ಹೆಚ್ಚಿದ ಚೂರುಗಳು
ಒಗ್ಗರಣೆಗೆ
ಎಣ್ಣೆ 4 ಚಮಚ
ಸಾಸಿವೆ
ಒಣಮೆಣಸಿನಕಾಯಿ
ಅರಿಶಿನ
ಇಂಗು
ಕರಿಬೇವು
ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು ಸ್ವಲ್ಪ
Our mother-in-law, Mrs. Leelamma, has shown us how to make a yummy gourd. There may be many ways of making this.
But they have been adapting the approach shown in the video above for nearly decades. Do the same for yourself.
Ingredients for grinding
1/2 tablespoon Urad Dal
1 tablespoon of sesame
Half a tablespoon of cumin
A quarter tablespoon of fenugreek seeds
One cup of grated dry coconut
1 cup of tamarind extract/juice.
Dry chilli - 8
Two finely diced bittergourds
Jaggery
Salt
For Tadka:
4 tablespoons of oil
Mustard
Chilli
Turmeric
Hing (asofoetida)
Curry
A little bit of coriander
