    Pignoli Cookie Recipe
    Yield: 48 - medium cookies
    Almond Paste 2.75 lb.
    Granulated Sugar 2 cups
    Confectioners Sugar ¾ cup
    Honey ¼ cup
    Vanilla Extract 1 tsp.
    Cinnamon, ground 1 tsp.
    Egg Whites 8 fl. oz.
    Total: 4.5 lb.
    Preheat oven: 330 F convection/ 355 F conventional
    Method:
    • Take almond paste, sugar, and confection sugar and paddle until almond paste breaks down into small pea size pieces.
    • Add honey, vanilla and cinnamon next, dough will start to come together slightly.
    • Proceed to add egg whites and thin the almond mix until pipable consistency.
    • Place mix into piping bag with plain tip and pipe onto sheet.
    • Sprinkle pignoli nuts over each cookie to top.
    • Place in oven and bake until slight browned around outer edges. Baking times vary, we recommend 10-15 min.

    I prefer Joe on his own. His crumb cake recipe is GOLD and his explanation is uninterrupted which makes it one of the best on the channel.

    He's used to work at Buddy's bakery part time and the rest of the time he worked as a firefighter. Now he's head baker. I love it.

    I remember growing up years ago watching my grandmother make these cookies she was from Naples Italy, and would bake these around Christmas and sometimes Easter. The smell in the kitchen was amazing I was blessed to have grown up in an Italian household great memories.🍰☕

    one thing i love about Cake Boss is all the Italian heritage, especially being 23.7% Italian myself. i get to learn more about that side of my ancestry which is really cool :-)

    I never understood why butter and sugar are mixed together; I always thought it just makes the sugar dissolve better or makes the butter taste better or something like that. Thanks Joe! He really should be doing more of these videos. He's a great teacher. Joe is my favourite by far (Grace too).

    These were a massive hit with my family. I needed to make a big batch. I was a little worried with how soft it got bec of others comments. so I used a little less egg whites & put a tiny bit of flour in. I used some extra cinnamon & let it sit overnight!! They came out soooooo perfect!! They went in the pipping bag without issue!! I’m in love with this recipe !

Grace is his partner in crime..love the team - Oh by the way thank you for the recipe been wanting to make a gift for an Italian friend of mine and I will try the "cookie" or in Australian talk "biscuit".     I make these!!l am Italian as well and one recipe adding or taking out makes different kinds same with Lasagna,Cannoli filling base is the same but adding or leaving out..Italian cooking baking is very easy..simple,fresh ingredients ❤️🇮🇹

      Hello Della, I have sent a message a few months ago saying that pinoli is the right Italian name but a lady answered to me " in the States we say pignoli". Finally someone confirmed I was right 😊

    if you don't have almond paste is there a substitute for it? i have a cake boss cook book made cookies once that needed almond paste but is very expensive for such a small amount.

    Great recipe! It's probably the only one that actually uses Mediterranean Pignoli. They come from Italy, Spain, Portugal, or Lebanon. Shelled Pistachios (di Bronte for example) come raw and unsalted.

    I loved this video and cracked up the entire time. I certainly felt at home when watching it. Thank you for sharing this fabulous recipe. I’m confused though as to how much honey, vanilla and cinnamon are used. Joe uses 1T of honey, cinnamon and I believe Vanilla Extract too but recipe provided is different. Even if you’re making a larger batch on the video -The measurements just don’t add up.

      Tony Area Check the baking aisle in your local grocery store. You can also check online. King Arthur Flour has it on their website. I have also seen it at Walmart and Target, if you are in the US. 🙂. You can also make your own almond paste if you want.

    In Italy are called pinoli not pignoli, they are from the pigna nutshell that can be find on pine tree 🌲
