    It is really nice to see a man baking as it reminds me of my father. This cake was one which I used to eat as dessert in school and I absolutely loved it along with Manchester Tart. I had custard with this cake and it was lovely. Thank you so much for uploading this tutorial as I would love to make this cake out of sheer nostalgia and because I love the taste.

      HI Zoe, No I didn't level the cake, it turned out like that, but it was a little lower right at the edges.

    Sir yesterday I had made this cake it was very delicious but compared to yrs it was small I baked in 20cm by 20cm pan

    Hi Geoff looks very nostalgically, it will take me right back to my school days , i'm going have a go at this one , could i ask were could i get those small miniature measuring glass from , Regards Trev

    You are on a roll with deserts we had at school !!!! I don't know if that was intentional ...we would get this with pink custard like the choc sponge you did last time...soooooo good ..it makes a lot dosn't it ?...Happy baking to us all in 2018 Xxx♡♡♡

      Have you ever made congress tarts ...my aunt used to make them (and took the recipe with her when she died !!!)they were pastry cases with jam and a topping like cake was on the top but as i said i have never got the top bit right ♡♡♡ .. i thought you might know Xxx♡♡♡

      Hi Gillian, Just saw this one too. I looked up Congress Tarts and they are very like Bakewell Tarts. I will have to have a good at them when I get a minute. I love Bakewells so I am sure I will like these too.

      Hi Alissa, I will think about such a video. I don't really have favourite gadgets but I do have several that I use quite a lot. I will try to think of a recipe where I can use them and talk about them.

    Love the video. Thank you. If I use plain flour, how much baking powder should I use? I can’t get self raising flour where I live.

      Hi Lynn. If using plain flour add a total of 3 1/2 teaspoons of baking powder, instead of the 1/2 teaspoon mentioned in the recipe. Make sure you add the baking powder to the flour and give it a good mix around to ensure it is fairly well distributed.

    Looks lovely, nice light cake. Seeing the jam reminds me of my favourite jam, damson, never see it now. Also celery soup. Times change...

      Hi Sue, Thanks very much. Oh yes, damson jam is delicious. I haven't had it for many years. I am a big fan of Wilkins and Sons Tiptree range. They do a damson conserve and have.damson jam in the Thursday Cottage range too. I must try them at some time.

      Hi Lucky13Lucky. The recipe calls for 8x12 which is half as big again as and 8 inch square tin. If you do the recipe exactly as it is, but put it in an 8x8 tin the cake would be much thicker and would need longer baking. However I think if use 2/3s of the ingredients only it would work well in an 8 inch tin. For the eggs 4 large is about 292g, 2/3 of which is about 194g. 3 medium eggs is about 190g so I would use 3 medium eggs in a reduced recipe. I hope I have explained that clearly enough.

      I ended up buying the right size tin and I made this today. It was very yummy! The sponge is light and bouncy and the raspberry coconut topping is a classic match. Brilliant recipe, would be perfect for kids parties too. Thanks Geoff!
