I have heard from several people that you should eat only a few a day, and to skip a few days in between. I use the gingko leaves to make a tea.

You're a brave man to bring those stinkbombs inside! What I do is remove the skins outside then wash the nuts off with a hose before I bring them into my house 'cause that smell is horrid...Some people get a skin rash from handling the fruit so you were wise to wear gloves.
I like your suggestion to roast the nuts in their shells; unfortunately, here where I live in MA there were no nuts this fall so I'll have to wait until next year to try this.

I have boiled them in the shell, it worked just as good as frying them.

You can put them in a microwave safe paper envelope and microwave 5-10 nuts at a time. Count the pops and stop the microwaving. It's good if you don't have so many or if you just want a few with a pint.

imagine once you deshell them you could soak them in water and Sprout them and then blend them and add maple syrup or something and make it sweet like cookie dough and put in the dehydrator. Or make a nut butter or milk, imagine there's more benefits while its raw as opposed to sauteing them after they've been deshelled. I've never tried them. the history of the tree makes me believe there's power in them, the leaves and oils as well.

I bought some "white nuts" in a Chinese grocery recently which say "Gingko nuts" on the package. They are soft and refrigerated and not in a shell. They are also white or kind of a yellow white, which is a different color than the ones I'm seeing in this video which are green like a pistachio. Can you explain why the "white nuts" I have are a different color and whether I can just pop the package open and eat them or should I roast them or something?

When you first shell ginkgoes, they have a buff colored membrane around them that falls away when you cook them, revealing the green nut inside.
Whatever you do, don't eat them raw!

After how many years gingko starts fruiting? How much time does it need?

about 20 years. In late autumn, the nuts should be ready.

oh man.... I just planted a little tree. So in 20 years , if it is a female... and if there is a male around.... I can expect nuts in late autumn. Setting my stopwatch ! :)

You should actually break the outside shell with a hammer or pliers..This will make it easier to PEEL!!!

the Ginko nuts have a toxic substance in them and it is recommended to only have a few (3 or 4 ) a day. Check it out.

Watching gingko preparation videos, I'm struck by how much work is involved in this process, and how icky it is, with disgusting fetid slime to clean off that also can damage your skin. I also see that the embryonic sprout inside is probably toxic, and should be removed, which required cutting them open and digging out the tiny sprout as well. I don't think I'll bother.
