You can't go wrong with a mix of Heath Riles BBQ Garlic Butter Rub, Miller Lite, two different cheeses, and a homemade roux. This is a great dip to make ahead and keep warm in the crockpot.
My Beer Dip is smoked on the Traeger Ironwood XL, giving it a unique twist. It’s perfect for game day, work potlucks, holiday get-togethers, or snack boards. Add a smorgasbord of veggies, chips, and pretzels for a winning presentation!

Ingredients:
• Heath Riles BBQ Garlic Butter Rub
• 8oz of Miller Lite, or your favorite beer
• 2 tbsp Butter
• 2 tbsp All Purpose Flour
• Pretzel Sticks
• 2 cups Shredded White Cheddar Cheese
• 2 cups Shredded Gruyere Cheese
Directions:
1. Set your smoker to 400º and place a cast iron skillet on your smoker to heat up.
2. Place 2 tbsp of butter in the heated cast iron skillet and allow it to melt.
3. Add 2 tbsp all purpose flower to your skillet, stir, and let it cook off for a few minutes.
4. Add 8oz of your favorite beer and stir. Allow it to cook off for a few minutes.
5. Place pretzel sticks or your own homemade pretzel on your smoker and allow it to cook.
6. After about 5 minutes, add in our shredded White American and Gruyere cheeses and Heath Riles BBQ Garlic Butter Rub and stir.
7. After a 20 minute total cook time and your cheeses are fully melted, pull your Beer Cheese Dip off the smoker.

This might be a little fancy for most people but I swear by using Allagash White as my beer in almost all of my recipes. I put a nice stout in anything beef related I'm doing but Allagash white is incredible for cooking in stuff like this and cabbage or collard greens.
