    Hello everyone, it’s Duidui here. Crossing-the-bridge-noodles is probably the most famous dish from Yunnan. It’s such a treat to have this dish when I’m so far away from home.

    Ingredients:
    Chicken soup:
    1 free-range chicken
    3-4 slices of ginger
    2 inches of leek
    1 tsp of salt
    Fried crispy pork:
    150g of pork belly
    100ml of pea flour
    1 egg
    pinch of salt
    pinch of grounded white pepper
    some water
    Assorted side dishes:
    Thin slices of dry-cured ham
    Cooked chicken
    shredded fried egg pancakes or raw quail egg
    shredded kelp
    Spinach or other vegetables
    Bean sprout
    Tofu skin
    Chopped spring onions
    Cooked rice noodles

    Steps:
    • Prepare a nice fatty free-range chicken
    • Clean it, chop it then boil it in cold water with ginger and spring onions
    • Clean the scums on the surface
    • Stew it with medium heat for 2 hours
    • Let’s make the fried crispy pork as one side dish
    • Thinly slice some pork belly
    • Seasoning with a pinch of salt, grounded white pepper, ginger, and soy sauce
    • Prepare the batter with 100ml pea flour and 1 egg

    • Mix it while slowly adding water to adjust the consistency
    • Pour the pork belly into the batter and make sure it’s well mixed
    • Fry the pork belly slices in 120-degree oil until golden brown and crispy
    • Now we have the fried crispy pork
    • Chicken soup is ready with a thick layer of fat on the top
    • Let’s prepare the assorted dishes for the rice noodle: Cut the fried crispy pork into smaller pieces
    • Slice a fried egg pancake
    • Cut thin-sliced dry-cured ham into pieces
    • All the side dishes I’ve prepared are: (Thin slices of dry-cured ham, Cooked chicken, shredded fried egg pancakes or raw quail egg, shredded kelp, Spinach or other vegetables, Bean sprout, Tofu skin, Chopped spring onions, Cooked rice noodles)
    • Soak the soup bowl in hot water to keep it hot
    • Get a big bowl of chicken soup, don’t forget to have some oil on the top
    • We can start eating now. First, put the raw ingredients and meats into the hot soup
    • Then comes the vegetables
    • Last we put the rice noodle in
    • Enjoy it!

      谢谢!一般亚超或中东超市有冰冻的老母鸡卖,芬兰超市也有整鸡,但是一般太嫩了

    鹌鹑蛋我觉得应该是拌里脊肉后汆汤更合适,这样里脊肉不会烫太老。!

      云南与越南接壤,菜式相近也很正常,不过这确实是云南菜
