    Cast iron skillet, brought to medium-high, butter should sizzle. Acts similar to that toxic Teflon coating pan. Teflon ruins the flavor of all foods. I mix butter and lard when frying the scrapple. That accent sounds like Bawlmereese, but could even be about anywhere Mid Atlantic. My point, try to locate Hughes Delaware Made Scrapple. Rappa is everything but the squeal. I’m not sure if it is still around, but it in lower slower Delaware, try Wilson’s general store. They have the very best scrapple, egg and cheese sandwiches.

I just tried cooking scrapple for the first time this morning and one I think I cut the pieces too thin and two I was trying to flip them too soon now I see and they were turning to mush. But I had to do was reassemble the bush in the pan and a different sized pieces and let it cook longer to wear it all clumped together to where I could flip it again. It was very good! But I will be using your advice next time

      I did the same thing when a guest brought some. Next time I won't flip it until it stops steaming and gets browned well and crisp. I think my brand of scrapple has a lot of moisture that keeps it from getting crisp. I had my small pan over a small burner that was on *high* for a long time until it crisped. I will also try a bigger pan and burner next time. Still, I wonder if scrapple generally is like that, having a lot of water than needs to steam off before browning well and crisping.

    • @RollingWithThePham

      It taste better than it sounds but 🤣 (Definition)
      Scrapple is typically made of hog offal, such as the head, heart, liver, and other trimmings, which are boiled with any bones attached (often the entire head), to make a broth. Once cooked, bones and fat are removed, the meat is reserved, and (dry) cornmeal is boiled in the broth to make a mush.

    Looks perfect! I must admit that I've gotten a bit lazy since I got my air fryer. I cut it thick, spray it with oil, and cook it on high for about 20 minutes. The crunch isn't nearly as good as yours. It's more of a delicate crisp. But, when I do it on foil, there's not much mess. Great video!

    • @RollingWithThePham
      @RollingWithThePham  3 роки тому +2

      I tried it in the air fryer but I still prefer it on the stove surprisingly because we like everything in the air fryer. It took longer to cook on one side and then it was harder to flip 🤷‍♀️ But thanks for enjoying our video!

      @@RollingWithThePham Oh...no doubt. Your way is much, much better than an air fryer. Like I said, the air fryer is a lazy man's way to do scrapple. About the only way I've ever seen that is better than old fashioned pan frying came from this one place that cut it into cubes, batter dipped it, breaded it, and deep fried it. Unbelievably good...but, way more work than I'll ever do. :)

    • @shyamdevadas6099
      @shyamdevadas6099 2 роки тому +1

      @@bruzote Actually, it's really weird. I've gotten to prefer my scrapple in big, thick, air fryer chunks. It's like chunks of piping hot scrapple pudding coated with a paper thin crispy skin. Doesn't fall apart, but you can't manhandle it the way you do with fried scrapple. I push a piece of foil at the bottom of the air fryer, apply some cooking spray, lay the thick chunks in, and fry it at 380F for 20 minutes. Then, I pull the foil out and either lay it on a serving plate or dump it right onto my eggs. One other thing. Practically all the scrapple we eat gets dried out from frying and becomes a stiff patty. This way is much moister and under the crispy skin it more like piping hot custard or soft tofu. Not for everyone, but it works for me. Give it a try. 😁

      As a non-fan (I just started using what was gifted to me), I find it to be very mild. That's why browning well is so essential. Otherwise, it's taste is flat. Seeing as it is an Amish traditional food, the bland flavor does not surprise me. You can always add your own variations to the dish. Imagine you're part Jamaican, part South Asian! :-D
