    Foccacia is dense and thin not thick and airy. I've spent a lot of time in Italy and everything I have had looks like what you made. You can add rosemary or olives to the top before baking. I like the recommendation to brush with olive oil and sprinkle parmesan and salt while hot and cut into strips.

      My daughter lived in Milan for a year. And focaccacia was what she'd grab for a snack during morning break at school. I loved it with the green olives on top and I wasn't a green olive fan back then!

    Keep trying Stacy. Bread making takes a lot of practice. And weather factors in to the process. And I love how encouraging Phil was about it.

    Temp has a huge impact on how much your sourdough will rise. Mid-70’s is where you wanna be. I feed the starter 3 times before I turn it into bread, get it real active. I also leave it in the oven with the oven off and the light on so it stays warm.

    We've traveled in our RV with our starter for over six years now. His name is "Bob the Blob" and his yeast source was naturally captured from the air of Vermont. We bake sourdough loafs both in our propane stove and in our Dutch oven outside. Our opinion for the focaccia fail is that you should not put your dough in the fridge overnight. Fermentation likes warmer temperatures and by cooling, you slowed things down enough to cause a problem. We made many "hockey puck" loafs until we learned that lesson...

    OMG! You must try my families’ easy bread recipe. We didn’t invent it though. We just all use it in my fam. It’s fantastically easy and impossible to screw it up. I got up the nerve to try making it for the first time during Covid. Now we make it about once per week. It’s the classic perfect boule. Crispy on the outside and chewy/fluffy on the inside. It’s not sourdough, but it’s WAY easier.
    450g Bread Flour like King Arthur
    1/4 t. instant yeast (Bread Machine Yeast)
    1 ½ t. salt
    cornmeal, wheat germ or more flour
    315g water
    1. In a large bowl, combine flour yeast and salt. Add warm water and stir till blended. Dough will be shaggy and sticky. Cover w/plastic wrap. Let dough rest 12-18 (preferably) hours in a warm place. (starting the night before you want it works out well.)
    2. Lightly flour a work surface and place dough on it. Or use oil, no flour. Sprinkle a little flour on it and fold it over on itself once or twice. Cover loosely w/plastic and let rest 15 min.
    3. Using just a little flour, shape dough quickly into a ball. Sprinkle a cotton towel with flour or cornmeal. Put dough seam side down on towel and dust w/flour or cornmeal. Cover with towel (I use the same one) and let rise 2 hours. Some readers swear it’s just as good to use an oiled pan for all rising and resting, and then flop it into hot pot when ready to cook.)
    4.) 30 minutes before dough is ready, put a large heavy covered pot in oven as it heats to 450 degrees. Flop dough in hot pot, seam up. Cover and bake 30 minutes. Remove lid and bake another 15-20 minutes. Cool on rack.
    weighing ingredients works better than measuring by cups, as it accounts for humidity weight gain or loss in flour. The dough should have some meatiness - it shouldn’t actually puddle out. When I used cup measurements, that sometimes happened and it looked and was a mess, though sprinkling enough flour on it did let me finally flop into the pot, and it still came out all right. So it is a forgiving recipe.
    Variations:
    Replace 1 1/4 c. flour with rye flour. Add 2 T. caraway seeds
    Replace 1 c. flour w/whole wheat flour. Add 2 T. honey
    Using up to a packet of yeast cuts time rising to 4.5 hours.

    Your Foccacia looked great! It IS a “flatter” bread. Add herbs and maybe a bit of flake salt. We’ve been watching your videos for several months! We plan of getting a motor home and doing some traveling.

    My Italian mom used to make 18 loaves of bread every 2 weeks since she was a little girl in Sassuolo Italy. She taught me to make bread
    when I was a kid and I can tell you a few good tips. 1 don’t bake when it rains. 2 Avoid humidity. 3 Use enough yeast,brewer’s is best. 4 use quality flour, not rapid rise. Don’t give up keep trying. We love watching y’all. My wife and I are planning to get a truck and a travel trailer when I retire from civil service in 5 years. I want to see this great country of ours. I’m a Navy
    vet as well. AO3 I only did four years and went college. I was stationed on the USS Theodore Roosevelt CVN-71 I’m a plank owner. Hope the bread info helps and thank you both for your service ❤️

    focacchia is normally a flat bread. If you want to try again, bake in cast iron dutch oven. Also let the starter get really bubbly (starter should rise 2-3 inches in the jar)

    We have been making our own Sourdough bread since March of 2020. We made our Mother as part of what we called it our cooped up project. We probably have over 150 loaves baked. Our camper oven doesn’t get as hot as we’d like, so we let it bake a little longer. We also use a Dutch Oven when we bake. That helps hold in the moisture during baking.

    Oh wow! We're Full timers now (2018) but used to live about 10 miles from the Equestrian Campground you talked about. Glad to see it is finally finished! It's so funny when I see places close to our old homestead. Thanks for that! ~Lynette

    In our early days of camping, 1990 we found the Okefanoke campground. Plenty of room and growing trees and plants between RV sites. In 2003 we found the slick rock campground at Moab, UT. It was open and spacious, no hookups on the area we camped but, the vista was amazing. Mostly our family has dry camped and boondocked on BLM and in forests.

    I too am working on the sourdough bread. I tried during the pandemic and gave up, but am trying again. I think your foccacia looked good and sometimes my bread actually looks like that... dense and heavy. Not great for a loaf LOL. I have made about a dozen loaves in the past two months and only two came out as desired. What I learned so far from the web:
    Use spring water if possible (bottled is fine if it says "spring water" because tap water is the wrong PH)
    Add your starter to the recipe when it is at peak activity (you did mention this)
    In my case, it took almost 6 weeks of feeding/care to get my starter full of great bacteria. The source of my starter said 5 days, but I have read it can take several weeks. It took many days of NOT refrigerating the starter, feeding it daily and keeping it warm in the oven with the light on. My house is cooler (thankfully!) but maybe not best for the starter, which prefers warmer environment.
    Make sure your starter is not sealed with an airtight lid. Airborne yeasts are good for it!
    I'm still experimenting, but these tips have helped me move in the right direction. Keep at it!!! Now I may have to go and make foccacia bread tonight!!

    Bet that bread would be mighty tasty with some gravy. You could also use the bread (sticks) for stirring a bowl of the soup you made too.
    You didn’t “fail” with the bread. It’s a lot like, “getting lost”, you’re not lost, you just took a different route. Sometimes, I just change where it is that I’m going to altogether. Problem solved, easy peasy. Happy roads make for light loads.

    You asked about campgrounds that we have found that were a surprise. I stayed at the Quintana Beach County Park near Freeport, TX. I had never stayed in a county park before, but it was very nice. Full hook-ups with walking paths to the beach. They also have some cabins. They had two rotating park hosts, laundry and bathhouse facilities. There were no trees for shade or in between sites, but the sites were not too close to each other. I think it was only $30-35 a night, which I thought was good for being that close to the beach. I will definitely stay there again.

    Love the video. Hope the second batch of bread turned out Ok for you. Our son lives in Indianapolis and when we visit him the most convenient place to stay is the Indiana State Fair Grounds. It's in the heart of the city. The sites have full hookups with clean bathrooms, showers and super cheap. Also, the sites are fenced off to the public and they have a very friendly security team.

    Hey! We really enjoyed your talk at Escapade in Tucson! We are very familiar with the NC State Fairground Campground. We're from Raleigh and that is where we did our first shake down with our first camper. Now it's where we stay whenever we're back for a few weeks at a time.

    I know your bread baking video is about a month old, but wanted to suggest a couple of things.
    Test your baking powder by mixing about half a teaspoon with warm water. (Warm =108*) If it bubbles it’s good.
    Test your baking soda by mixing half a teaspoon with vinegar or lemon juice. If it bubbles it’s good.
    Make sure your flour isn’t over 6 months old.
    Sour dough starter dies in cold temperatures.
    Humidity greatly affects all baking.
    Your dough had not risen when you put it in the pan.
    Not sure about using convection microwave, that could have been the problem.
    You can bake bread in some air fryers.
    If you have a toaster oven use that, less problems.
    Hope something in there helps. Keep working on it!

    My husband makes me sourdough Rye bread every week in the RV in our convection oven! Works great! He does put a small container with water in the oven while baking the bread so that it doesn’t have blow outs! The best! We also use a stone to bake on. Much better

    We just left Territory Route 66 RV park. We got off of I 40 onto Route 66. Definitely not Interstate material but we found a really quaint place with 18 spaces on Route 66. We were in rural country. We were back in time. We were glad we went. Found another Campground in the area called Red Rock Canyon Park. It was where the Plains Indians lived in the winter. All of it was a wonderful find and cheap in price only.

    I love focaccia, it’s usually thinner than bread and a bit denser. If the flavour is good, just try letting rise more before baking.

    We stayed at a 1000 trail campground on lake Gaston in NC (without a membership) and loved it. We had lake views, great people and a lot of boating fun. We also look at state parks and found a great place with our own private butterfly garden in a semi circle which blocked out any other campsite and cost us $25.00 per night. We believe that was in Iowa. We are not good at remembering all our sites. Love your channel. Thank you for your hard work to keep us enlightened, entertained and excited to get back into the RV.     Your focaccia was not a big fail. To test your starter before you mix it drop a bit in a glass of water to see if it floats. A cheat tip when starting. Add a bit of dry yeast to the flour mixture as well as your starter. Sometimes your starter isn’t mature enough right away. Don’t let perfect ruin your bread. It took me forever to get my starter correct. Finally I got a decent loaf! Lol! Don’t give up! Have fun!

    Yes, yes I have checked out fair grounds for camping. If you guys ever get to Michigan one of, if not the closest, campgrounds to Detroit is the Wayne County Fair Grounds. The last I knew they had camping. It's not luxurious and it's not terribly private but it's only about 20 minutes from Detroit and probably about the same to Ann Arbor. Now when are you guys coming to Michigan to look at all of your lighthouses, we have more than any other state in the country you know. Keep the good stuff coming guys.

    I know everyone is ready to go somewhere on a big trip, but practice runs are great adventures and training. We are not planners, but did Alabama to Maine in a truck one year in 7 days and it was 48 hours before we left had when we considered going to Maine. It was a blast. (We are now retired.)
    We have a rv for serval years and planning tools that drive us nuts, so recently we had to have recall done on RV which, called for a a overnight trip, which turned into 18 days of playing with RV Parky, RV Garmin, serval other phone apps on the road.
    We were in Alabama, Georgia, Mississippi and Florida. We learned so much, found wonderful parks and hidden gems and we were never more than 7 hours from home. Our longest drive was about 4 hours.
    It turned into COE wonderland, a state park, Interstate overnight park and a wonderful family owned park.
    We are thinking of trips to head waters of Mississippi River and Westward, but this really built our confidence in our apps and was traveling the way we enjoy.
    I encourage everyone one to take a learner trip and enjoy what you find on the way. Most of us will never be full timers, but love to watch the adventure.
    There is no reason for us not to grab some adventure for ourselves.

    Stacy, it’s the convection oven. I felt like a failure making my always-perfect popovers in the convection oven. If there is another way to bake it (? Slow roaster?) that isn’t convection, try it. I guess all that circulating air won’t let it rise to its glory! Have fun.

    Ok, so we’re learning. Fairgrounds are a place to look out for, thanks. However, the one in Monterey CA where our son is at school, is about $70/night! As new RV’ers, we weren’t expecting this for what is essentially a parking lot (granted, full hookups). So much to learn! Thank you for your tips.

    Best find , fair grounds at Blue Earth Minn. Stayed there twice on our way from Iowa to South Dakota ! take the exit south to Blue Earth turn right at the Jolly Green Giant ! 20$ Night Full hook ups with sewer , very quiet! Flower gardens between some of the sites ! Great bath rooms and shower's ! 20$ and a dump station , and fire wood all on your honor !

    Many TX city parks allow you to camp overnight and many stays up to 3 days free with water and electric, some have full hookups. Those are my fave camping, you can take the electric bike out and you are right in the city, so your bike can cover usually the whole town.

    Don’t give up on the bread. Weather has a lot to your rise. Being you had rain and humidity it will take a lot longer to rise. Don’t go by the time given on recipes, go by the look of the dough and the bubbles. It took me a long time and patience to get it right now making bread is fun and easy. Enjoy.

    Veterans Memorial Park in Mount Airy, NC is a fantastic campground. There’s a paved bike trail right across from campground. The bike trail is very peaceful.
    In October it’s the perfect place for the Autumn festival. The festival is blocks long with something for everyone.
    Very peaceful we actually extended our stay. Rode our Harley on the Blue Ridge Parkway. An the tour of Mt Airy in the old cop car is a must! It’s a town everyone would love
    We met Doug and Judy they manage park and are very nice people.

    Do more stretch and folds to allow the CO2 to create structure (be gentle) and when you put the dough in the pan gently poke the dough and do not deflate it. If you want a decent rise in the oven cover the dough with another pan (dutch oven or alum. disposable pan) and mist generously with water. Keep trying you'll get there.

    The coolest place we found was West Point Lake in Georgia/Alabama. Very quiet area! Not necessarily a bunch of adventure around..depending on which state park you land at they have HUGE paved pads!

    NC State Fairgrounds is a great place (no frills, but full HU's) when we visited family in Raleigh. Another great place if you go to the UP of Michigan is Little Girl's Point County Park, near Ironwood, MI - electric only, but right along the Lake Superior shoreline. Beautiful and peaceful.

    Love the video guys! My mom always made peanut brittle for Xmas and my wife tried for years to make and failed miserably. Only to find out that it was the humidity!! So don't give up. Stay safe and warm.

    For the starter, use a 50/50 mix of whole wheat and rye flour. Use bread flour for whatever bread you want to make. I don't do the fold and stretch thing. Too much work. Just stir the ingredients together, let it rise for 30 minutes and then put it in the fridge over night. In the morning give it 2 to 4 hours to warm up and rise again. Then use your preferred method of baking. And you can always cheat with adding one bag of yeast to make the dough . Feel free to contact me for more tips. Kreg

    I’ve never baked bread but my mom (89) has for years. She always says the first baked of a starter never turns out right. But I think yours looks perfect.     Water temp for bread is crucial, it should be just barely warm to the touch. Our unique stays are in Cape Cod on the beach. We air our Fleetwood class A tires down to 18 psi and drive over 30 foot sand dunes onto front beach. Nothing beats coffee on the sand at sunrise!

    OMG....I came believe you guys stayed 10 min away from us and we didn't even get to come meet ya'll!! Even though we are from Raleigh, we have stayed at the NC State Fairgrounds in our RV 2 or 3 times. Darn-- wish we had known.

    Using only egg white in your bread will give a low rising bread. Hole eggs give a medium rise bread. Using just the Yoke will give the best rise.

    We stayed at that fairground in October 2020, it rained when we were there as well, Due to Covid, the staffing was minimal and some of the sights needed maintenance and repairs. Enjoy your trip up the east coast.

    We stayed at the county fairgrounds in Milwaukee a few years ago for a CVMA convention. There was a Greek Festival going on, complete with a carnival. All us really old kids had a blast!

Husband spent the day scrubbing the roof, then washed and waxed the whole coach, loaded the bikes and now he's crashed in the recliner with a cold rag on his head & eyes closed! I spent the day cleaning and organizing the INSIDE of the coach, doin wash etc. Just finished placing a Kroger pickup order. Heading to the Outer Banks, NC in the morning. Take care!

    Stacy, I've been making sourdough for a few years in my sticks and bricks. I've not made it yet in the RV, but I plan to, even in the convection. But if it doesn't work well in that we'll take out the dishwasher in the new-to-us 2009 Allegro bus (standard with a dishwasher??? what even???) and replace it with an oven.
    My first 5-6 loaves were 'fails' but still edible, and tasty. It was a learning curve. And, cuz currently I'm on a gluten fast I'll probably need to reacquaint myself with the method again.
    I found that I needed to feed and discard my "Flora" a few times. I keep my discard and make cookies, biscuits, pancakes, waffles and even have added some to the eggs for french toast.
    And, then, as you said, make the leaven when the starter is at it's peak. And don't let the leaven over rise either. But you'll get a feel of how long as you make it more.
    I'm at high altitude, which requires a few more stretch and folds.
    My oven pop also has been hit and miss, as was with your focaccia.
    DON'T Give up. If you like sourdough or need it to ameliorate gluten issues it's worth it. But it is a learning curve experience - it takes some time.

    Sourdough can be a bear to make. Keep up with it! I teach classes because it can be so difficult to make! The other obstacle of cooking it in an RV makes it even more challenging! Keep trying!

    I made traditional sourdough bread all the time. You have to have the water temperature at 108 Degrees do not use too much oil in the pan and the starter does not like cold rainy weather. Your kitchen needs to be warm and no air blowing in the dough as it rises. I am 57 years old and I have been making sourdough bread since I was 25. Hope this helps. If I would have known you were in NC I would have brought you some homemade sourdough bread.

I’ve made bread for a lot of years and you can always have hit and misses. Be sure your water or liquid isn’t to warm or it will kill the yeast. I test it on my wrist like a baby’s bottle 😊.     It's not regular bread its focaccia bread you use it like a naan bread, & pizza crust you put stuff on it and then you can make Parmesan sticks you can do for sliced tomatoes, Rosemary, mozzarella cheese, basil, fresh spinach. all different kinds of cheeses you can make it like u like. It looks right. You might want to dimple the dough more before you put it in the oven next time. Look up on the computer/phones. There are sooo many great recipes. Hope you continue to make bread.

    Loretta Lynn's Ranch in Hurricane Mills TN is pretty nice. If you qualify Peregrine Pines FamCamp on the USAF Academy campus in Colorado Springs CO is awesome. Quiet, nice post (because its Air Force duh) and usually pretty open in the summer months. The JBSA FamCamp near Canyon Lake TX is pretty nice. Its kinda small. I think they only have 7-10 FHU spots but its very quiet with private access to Canyon Lake. We are really just starting out so we are still hitting the big spots.

    I failed the first time bread making too. I was too impatient and did not let it rise long enough. Just keep trying, you'll get it. I think the stretching and folding is instead of the kneading process, and the more you do it, it improves the taste. Good luck with your next attempt. ❤️

    Love the day in the life video. We actually stayed at the NC State Fair Grounds last April for our Son’s wedding. Not bad at all. Convenient location and full hookups. Once I figured out the water spigot. LOL.
