My favorite TOTR cocktail is the Phoenix Margarita! I make it all the time at home. The green pepper together with the pineapple syrup really lifts that drink.

When I think of my favorite TOTR cocktail my mind goes first to your updated Aviation... probably because the place of the Aviation in my early cocktail journey closely mirrors the history of the Aviation in the history of the "cocktail renaissance." It was my gateway into "craft" cocktails but after a while its appeal faded as I found it perhaps a little out of balance. Your take on updating it was truly inspired, not just in re-balancing it, but in the inspired use of blanco tequila to bring everything into harmony and making the Aviation, your Aviation, again into a cocktail that I really enjoy. I'm not trying to say that it's your "best" or most original cocktail (you certainly have plenty of those), but it's the one that plays the biggest role in my own cocktail journey.

Your original video said equal parts lemon and syrup. In this video you say more lemon than syrup. In the description here it says more syrup than lemon. Could you please clarify ;) this? But before I do that, may I ask what that last glass is? Is it a wine glass? And what capacity does it have? About 5,5-6oz?

Just downloaded the app and tried it out. It’s great and look forward to using it regularly 🤗love your channel and am planning on trying some of your techniques , especially the milk clarifying. I have one small criticism of the app though. I think it needs a wider range of recipes. Last night I watched a episode of bar talk and cocktails and found that I have all the ingredients to make an Algonquian (rum version) the app only told me I could make a daiquiri and margarita 🤨I know I can make way more varied libations with my inventory than that. And yes i inventoried everything! Just saying 😉😁

First of all, thanks for trying out the app :) We wholeheartedly agree, we want the app to contain a lot more recipes and every couple of weeks we release updates that do include new ones as well as photos and new features. We try to take our time with each recipe to provide hints and trivia, and to make sure that it's actually good! We're a fairly new app, so with a bit of time we're sure our collection will be much bigger :D That being said, thanks for your feedback. I'll actually make sure I add the Algonquian to my priority list of recipes to include ;) Cheers!

I will change the look and mouthfeel. Most of the time, our goal when clarifying a cocktail is to get a clean silky mouthfeel so adding an eggwhite to it would undo this like you say. But milk washed cocktails have protein in them because of the whey incorporated with the milk. So if you shake that without eggwhite, you will get some foam. Not as thick and stable as with an eggwhite but you will get some.
Would the clarification process yield a similar result if you used something other than simple syrup? I’m making a twist on a whiskey sour using a cocktail syrup I made from blueberry jam
Question! If I don’t have St. Germain, but i have Elderflower Syrup and Vodka, could I poor half and half bottles into a jar and make improvised Elderflower Liqueur for your cocktail? 🥲 Congrats on the 100k man, well deserved!
Of course you can. you might have to adjust the balance and ratio a little bit since this DIY liqueur might be a bit different in terms of sugar content and flavor but that should be close enough. Cheers and thank you!

For clarified cocktails can you use any sort of non-dairy, non-egg based method? What do you recommend?
It doesn't work as well usually as it's the fat and protein in the milk that curdles. But I had nice results with coconut milk and oat milk. Cheers!

If I do this, but add an egg white and froth it prior to pouring, do I undo the clarification smoothness and clarity from the egg?

Hi Steven, yes it will. Sometimes, depending on the ingredients, the drink will keep some color but it will be clear, if that makes sense.
