This classic New Orleans cocktail is an absolute summer crusher and also the perfect cocktail to clarify with milk. The Hurricane's easy version is a wonderful drink if you are limited in your bottles, but if you have a bottle of OP Jamaican rum in your arsenal, please use it - it simply elevates the classic Hurricane to another level! Cheers.
EASY HURRICANE RECIPE
1 oz White Light Rum
1 oz Aged Rum
1 oz Passion Fruit Syrup
1 oz Lemon Juice
MY HURRICANE COCKTAIL SPECS
1 oz Light White Rum
1 oz Aged Rum
0.25 oz OP White Jamaican Rum
0.75 oz Passion Fruit syrup
0.75 oz Lemon Juice
0.75 oz Orange Juice
Pinch of Vanilla Paste
HURRICANE CLARIFIED MILK PUNCH (For 2)
2 oz Light White Rum
2 oz Aged Rume
0.5 oz OP White Jamaican Rum
1.5 oz Passion Fruit Syrup
1.5 oz Lemon Juice
1 oz Orange Juice
1 cm Vanilla pod sliced and emptied (drop the whole piece in the cocktail)
2 oz Whole milk
In a container, add all ingredients except the milk
In another container, add the Whoe milk
Pour the cocktail over the milk
Strain through a rinced coffee filter
Once the cloudy liquid stops dripping and only clear liquid is dripping, switch vessel and repour the cloudy liquid over the unfiltered mix.
Let filter all the way through
Stir over ice
Bottle up
Keep in the fridge until thirsty
This will keep for several months in the fridge
Passion Fruit Syrup Recipe
200 gr Unsweetened Passion fruit puree
300 gr Sugar
In a saucepan over medium heat, add all ingredients
Mix to combine and stir until the sugar is dilluted.
Remove from heat
Bottle up and keep in the fridge for up to one month

I made a large batch of fassionola cordial last spring for hurricanes and froze it in 250ml containers so that they would last all summer. Worked really well for a couple of birthday parties.

Probably my proudest creation is a variation on the Hurricane I call The Rubin Carter:
90mls guava infused Plantation Pineapple Run
45mls homemade fassionola
45mls lemon juice
Shake over ice
Pour over pebble ice made from hibiscus tea.
Takes a bit of work, but really great stuff - looks beautiful, tastes beautiful and really great to impress guests with. You can scale down from the 90mls pretty easily, but it's not hugely more lethal than most tiki cocktails.
It has been a while since I've made a Hurricane. Your recipe sounds amazing! I'm going to have to give it a try! I don't have the patience to clarify drinks. LOL! Great video, cheers!
Make a regular one and while you're drinking it, start a milk wash batch ;)
I use half and half Bacardi 8 and Appleton 12.
If you really like the taste of overripe bananas then funky jamaican rum are something for you.

So, I just did this, and I struggled a bit, I made too much for the size coffee filter I had, and it took forever. But I think it still turned out great. Something I really struggled with was getting my cherry and mint to sit nicely on top of my ice. I see now that it looks like you created a sort of divot in the ice for it to sit in... brilliant! Did you just use an ice stamp or something? Or is there an easy way to do that? Awesome video!

Do you strain your passion fruit syrup? It looks super clean compared to what I've made in the past.
I really love your videos. You use Unsweetened Passion fruit puree in passion fruit syrup recipe. Does the unsweetened passion fruit puree buy from store ? Or you just muddled the fresh passion fruit.

Okay, experiment completed with a successful outcome.
No enzymes required, did 500 ml batches, spun for 15 minutes. I was a little clumsy with Batch 1 and had to filter out some milk solids. I may need to tweak the dilution of my 1.5 litre yield, but overall way faster than the 'manual' method. I liked the result so much, I did the same thing for your Clarified New York Sour! (I wanted some batched cocktails for the Aporkalypse III party we are hosting today).

What makes something fit/not fit for clarification? Looking for some nice gin/vodka drinks that works well with prebatching!
It's hard to say like that but usually for sour style cocktails (because you can clarify cocktails without citrus as well but that's trickier) bold or intense flavours usually work better. But not just that because light cucumber or coconut flavours also shine after a milk treatment. I still have a bottle of milk washed rum punch I made I think it 2020 in the fridge. I had made a really big batch for a party and then 2020 ramped up. It just gets better and better the longer that it sits in there I swear. Had 5 or 6 bottles originally and I kept telling myself that i needed to make another batching and kept putting it off and now I am gonna run out.

I have the Cocktail and Sons fassionola syrup but not the passion fruit syrup. Is there a reason to use one over the other?
I have some passion fruit liqueur that I haven't used since I made a batch....wonder how that would mix
TBH, I'm not sure. Usually the passion fruit syrup is much more tart and bright while the liqueurs are heavier and not as fruity... I personally wouldn't use that but since I don't know what the liqueur is, I can't tell.

Havana Club 3/7 year are my go to Rums also! Is a drop of vanilla extract an ok substitute for the pro cocktail? I love the easy pro clarified series! 😛👍

I really love your videos, but please remove the ML announcements from your script. You could still display them on screen but hearing it for every ingredient is really annoying.
By the way, you still have the best visuals in the whole game by far. Even if I wouldn't be into cocktails I could watch your videos for days, just because of the esthetics.

Wait, what's a "rinsed coffee filter?" Do you just take the coffee filter and run it under water real quick? Or pour water into it and let it filter through? Or is it a special type of coffee filter?
It's just to run a couple of oz through it to rinse it and get rid of the paper taste it could have

What gives? I attempted the clarification with a rinsed coffee filter in a funnel in a glass. I came back two hours later and maybe a tablespoon of the liquid had filtered? Wasted 4.5 ounces of good rum. I can't wait 12 hours for two drinks to filter. Something is not matching up with your method?
That's very strange. Maybe you coffee filter is to fine and the funnel too narrow?? I never had this kind of problem tbh and I made A LOT of clarified cocktails. What I would recommend in this case is to use about 4 layers of cheese cloth placed in a large fine mesh strainer. This way, you'll have a larger surface for the liquid to drip rather than just a little hole at the bottom of your funnel. Hope this helps.Cheers!
