Ok i know it's 3-4 years later, but if you see this, my question is how can I get a hold of some of that crane meat the don't come in my state often and the ones that do are protected. Would like to get a hold of a few whole ones if there's some place or someone that sells them. Thanks for any knowledge you might have.😊

Beef tallow would work also although may smoke easily too depending (Wagyu for example). I've migrated to using some peanut oil and a bit of butter. Having better results with that now.

No. We actually hunt sandhills with steel shot as the season coincides with goose season and we sometimes get shots at geese. In any case, I try my best to pick out any pellets that could possibly get left in the meat.
Protected here in Michigan. Theyre taking over fields and crops by the thousands tho. Idk why they wont open a hunting season for them? They get hit by cars daily and ruin crops. Not to mention shitting alover yards if you live on a lake.

Was lucky to try some for the first time this past weekend and it was AMAZING. Tasted almost indistinguishable from beef. Very very close to a ribeye, but not as fatty. Not sure which I prefer now, honestly

It looks more red in the video than in person. I cook them a bit more for the kids but like any venison, you really don't want to overcook the meat.
