Your problem sounds like the computer has a V6 program in it instead of a HELLCAT V8 program the way the horsepower and torque read on the diagnostics. Your doing great learning to fix & diagnistically solving the problems. "FIX'ER'UP & GET'ER'DONE D.I.Y. GANG!!!"

I miss some older episode. But did AWD 8HP90/95 fit tunnel without mods? Also what they did to front suspension to fit front diff, because on Durango/Jeep its on driver side vs cars passenger side.

When the oil temp or transmission temp can't be read (bad sensor) the computer likely substitutes the coolant temp for the value it can't read.
