- This is a casserole that you will want to put on a rotation for meals. Kids love it too. This really makes a big dish and when you add sour cream, pico, and guacamole it takes it up to another level. We like it with tortilla chips.

I did make this. I made two 9x9 pans. One for my son & one for me. It’s delicious . Plus so easy & made with on hand ingredients. That’s the part I really like. It’s a WINNER

Adding salsa into the meat/veggie part might help it hold together better. Shredded cooked chicken instead of beef would be delicious, too. I like the idea of toppings--sliced black olives along with the ones you mentioned.

Could you use refried beans on the bottom. I don't like rice.
Isn’t the rice a little bland…. I’m trying to think about what other kind of rice I could use. Maybe Mexican rice ..

I think I would add some kind of liquid to this so it wouldn't be so dry.
