I learned the complete opposite of this. When I started I had the Ultimate Gracie bjj dvd set and I watch and memorize everything. Then I had an instructor from Brazil that had burned every grappling instructional know to man and lent them to me and again I memorized and practiced it class. Then the previous team I trained with made us learn multiple katas to practice every move from every position. Shortly after, UA-cam became a thing and I started compiling playlist of every position and technique in BJJ.
At one point I won Purple belt worlds in 2015 via a move I watched UA-cam 10 minutes before my match.
But after teaching for 10+ yrs and 20+yrs of training, I realize that I am the exception, and my students cannot be held to the same standards I have myself. After testing out these games out with my students, I realize this way is way simpler.

So here's the million dollar question (and I'm only half-way through listening, so please excuse me if this question gets answered): I would really like to experience this learning method, but I live about 900 miles away from Greg's gym. As a white belt who has been struggling with some of the very gaps this you cover in this interview (the huge gap between resistance-free drilling and full-tilt sparring), I have been frustrated with my progress. I have on multiple occasions asked blue belts or advanced white belts to help me drill escapes where they just try to keep me from escaping and I just practice my escapes, but a lot of the athletes I know would much rather spar. So how can someone in my position participate in Greg's coaching style?
EDIT: The answer is at 38:47, and it's a good answer. Thanks for a great interview!

I have been saying this to anyone who will listen: Greg Souders is leading the Hegelian Post-Modern revolution in Jiu-Jitsu, the same way Danaher led the Analytical modern revolution.
