    For future reference (2 Cups method)
    30 g Coffee - medium grind size (~750 micron - 25 clicks Comandante)
    500 g Water @ 93 C
    45/50 interval between pours (Increase time between pours with denser beans, decrease time with lower dense beans).
    Pour 1 (Circle pour) - 0:00: +110g
    Pour 2 (Circle pour) - 0:45: +120 g (Total: 230g)
    Pour 3 (Circle pour) - 1:30: +130 g (Total: 360g)
    Pour 4 (Circle pour) - 2:15: +140 g (Total: 500g)

    Awesome, thanks for this recipe, Matteo! Personally I havn´t used my Orea V3 185 a lot in the past months, I don´t even know why. This video is a good reason to switch it up and use the 185!

      Hi Gabriel, thanks for the comment. There are so many brewers in the market that is perfectly normal to don't use all of them. This method will probably work with other brewers, you just need to adjust some variables.

    Thanks for explaining all the variables and when/why to change them, great to have a recipe that actually teaches you how to dial in a coffee. First cup is excellent, can't wait to tweak it and see if I can do better

    What are your thoughts on wet wdt of the grounds during bloom phase?

      Thanks so much for your comment and thanks for the nice words. About wwdt I'm always worried to pierce the paper filter, so I don't use it. I think is definitely better than using a teaspoon.

    Matteo - thank you so much for releasing this video. I've already used it a few times, and it's been so helpful. I also love how you provided some helpful tips to consider when changing variables of the brew.
    Two questions for you:
    1) Are there any changes to the recipe that your start with when dealing with different roast levels? You mentioned how you might approach coffees with different densities and processing methods, but do you have a starting place for light vs. med vs. dark roasts?
    2) Do you think you could scale this down to 15g coffee to 250g of water by subtracting 25g from each pour?

      Temperature of water is what I change mainly, for a dark roast I definitely start with 90 or 88. with light roast 96. With medium I set in the middle. Dark roast is typically less dense than light roast.
      you can scale it down, but if you reduce 25g you end up with 200 g of water. you can try with 15g each pour.

    Really enjoyed this video and starting to get better results. Could you maybe do a video for pouring techniques on its own? I feel like often I get worse brews just because my pouring isn‘t the best.

    really like this method. I have the TimeMore B75 as my only Kalita style flat bottom brewer and adding additional 10 grams per pour will reach the residue in the ribs nicely at every additional pour. Nice thinking!! Looking forward to test it on my B75.

      @@matteofromtheswamps Tested 4 times now - works a charm on the B75. I did both 250ml and 300 ml brews. It was a little bit faster - but could be grind size and coffee. Anyway great taste and so fare with this coffee very consistent. I cannot measure extraction but taste did not lack anything.

      I think with the V60 should work too, maybe change a couple of variables to make sure the flow is good

    Hi Matteo, thanks for all your awesome work.
    I have a medium roast and use your exact numbers for the 2 cup 500 ml. The water seems to be fully drained in around 15-20 seconds. Is this optimal? Do you aim for the water to finish draining right when you begin a new pour? I grind 25 clicks on commandante.
    Oh and I also brew on the kalita 185 since my orea hasn’t arrived yet - I don’t know if that changes things

      Hi.
      The water draining it really depends also on the kind of coffee you brewing. With same grind size, natural processed coffee drains faster than washed processed. If very fermented, drains even faster. I don't really look at that, I based that on taste, if it taste good fair enough, if too weak and under extracted I grind finer to increase contact time and surface. Basically there is no optimal draining anymore.

    Hi Matteo, would you grind coarser than 25 click for a 30g 480ml or 40g 640ml brew? I like to be in the 1,35/1,45% tds range and i fell that the deeper the bed of coffe the higher the extraction with the same parameters but im not completely sure. By the way, i dont know if you agree but i have been swinging these weeks between v60/orea and i found that i need to grind finner in the orea resulting in different flavour profiles or balance between them at the same level of extraction than the v60 but maybe its me and it doesnt makes sense at all

      everything you saying make sense. Yes, higher quantity of coffee in the brewer, higher is the resistance of the bed. This increase the contact time between coffee and water, so higher extraction. Also, yes, finer with Orea because has a faster flow, reducing contact time so lower extraction.

    Hi, I tried this with Kinu M47 Simplicity set at 4.5.0 on a fermented honey processed, light-medium roast, and got no acidity and some bitterness. Decreasing temperature nor pour interval didn't help. The flow rate is OK so I didn't want to grind even coarser. Do you think I should grind coarser?

      Hi. Fermented coffees are a bit tricky because they are very soluble. You can grind coarser, no worries about the flow, they are fast flowing anyway. Otherwise you should change the whole pouring pattern and combine pours. That will decrease extraction

    ❤ can you please explain water temp on The viratls. So Natural And Anaerobic beans are at a higher temperature temperature 96c 97c ??? And washed are lower at 90c ?? I'm just trying to understand. Thanks ❤

      Yes it works, but you should charge some variables, like grind slightly coarser.

    Are you not blooming? Also I see your water temperature is hotter than when you use the flat thin paper Filters. Is that because of the thickness of the kalita paper or something else? And will this work with making 28G ?

      Yes the first pour is blooming. Hotter water because in this method I play with less pours, less pours less extraction, so I compensate a bit with higher water temperature. 28g coffee? I share the method for brewing 30 g keeping the same dynamic.
