The noodles-to-sauce ratio is always key when it comes to crispy noodles like that...not too much where it totally douses the crunch, but not too little where it feels like you're only crunching on dry noods. Amanda's face when Felix said "Chinese kitchen sink"....ZING!
Yes, the ratio is key. One thing I do whenever I order this is ask for the sauce in a separate bowl. That way, I can just pour a little at a time just over the section I eat.
I used to work at Starbucks Sears Ala Moana and Amy’s Hallmark Ala Moana. Ala Moana Shopping Center changed a lot. I saw that you went inside Hallmark, used to be a corporate one, now it is a franchise.
My grandfather used to always order cake noodle when we used to go to Kin Wah and now that I don’t live in Hawaii, I miss it so much. When I was home in November, we ordered beef broccoli on cake noodle from Little Village Noodle House and it was sooooo good! Can’t wait til I’m home next year. Going to try to get to Kin Wah. I miss that place like crazy. And, I do remember all of the koi at Ala Moana… miss the good old days at AMC. Mele Kalikimaka! 💜
I remember the koi pool going all the way down the shopping center . I also remember Ala Moana only having 2 stories, street level and mall level. Those Noodles looked so crispy. No worries, Amanda, we all have bad hair days. You looked good with the beanie on!
Perfect ornament for you guys in 2021! I always get coffee at Ala Moana and ate at that poke place on the ground floor. I don’t recall having eaten at the Lanai but walked around a few times! The beef salad looks so good, gotta try that next time!

Thanks for clarifying on where Tae's moved. I'm from Maui and used to hit up Oahu a few times a year. I remember going to Tae's when it started as a food truck in Don Quiote parking lot, then they later got a storefront nearby one block down. Due to the lock down I haven't traveled much until a couple weeks ago when I went to see a concert at the Blaisdel. I was disappointed one night when I did not see Tae's at the corner as I was craving a Garlic steakroll. Now I know they got a name change and is at the mall. Chee garans going hit them up next trip. 😊 💪🏼

The gravy on the crispy chow mein noodles is a basic Cantonese gravy made with soy and oyster sauce, chicken broth and thickened with cornstarch slurry. It's pretty standard gravy for any Cantonese stir fry like beef and broccoli, or any other meat or seafood vegetable dish.

So far i have learned Hawaiian names for noodles . Ho fun is look noodle. fried egg noodle is Cake noodle. like most have said , that sauce is just soy and oyster sauce thickened with corn starch .
My go to used to be the old Shirokiya bento section, upstairs from the regular shopping area. Lots of goodies to get there and they even had andagi. Most of the Cantonese restaurants in the SF Bay Area call it Hong Kong style noodle for the crispy noodle dish you had. Thanks for another great video!

Sadly, Shirokiya charged exorbitant $$$$ to rent their space +mismanagement led to eventual closing, 2017-18 or so. Bankruptcy court Slammed that door Tight, 2020-21 or so. So Very Sad!😢
I don't usually eat at the Lanai Court, I think I've only had musubis there. If I am on Oahu I hit the Makai Food Court. I don't really shop at Ala Moana any more, I worked at a clothing store there in the late 70's. Yes the old Shirokiya was one of my go to places. There is a Korean Bento place at the Makai across the asle from Jolibee when you enter from the Ala Moana Park side that is really Ono. I can't think of their name. Mahalo and Aloha.

Old Shirokiya was winnahs. To me Ala Moana has gotten too tourist-oriented, which includes the majority of the current eateries. Unless I'm craving for something, I usually end up at Foodland. :)

The gravy is generally made with a shoyu, oyster sauce sometimes little bit water then they thicken it up with little bit corn starch slurry.
