What's more plausible: we continue to discover new things that God faked about the universe, or the origin stories in the Bible were made by people that didn't know what they were talking about?
On day 7 God rests from creating even to this day .Correct there is no verse that says animals didn’t die before the fall of man. But we do have a verse that animals did die during Gods creation event. Psalm 104:29-30

I think “gap” is a bad description of the difference between 1:1 and what follows. I’ve always looked at Genesis 1:1 as a “summary” statement (“In the beginning God created the heavens and the earth.”) That summarizes all of physical creation. Everything that follows (Gen 1:2ff) concentrates on the creation of Earth. There is no “gap” but an understandable concentration on the portion of the creation story that impacts us the most. And yes the UNIVERSE is billions of years old, based on (1) TIME (as we understand it) and (2) observable information left by God’s general revelation. We are now using TIME (as we know it and measure it) that ITSELF was ALSO in the process of being created (along with space, matter and energy) during those six Yom. PLEASE stop using the Bible to determine the “age of the earth.” That’s why God gave us General Revelation.
How long are the days (Yom) in genesis Is an interpretation debate. How old the is the universe is a science debate. You are correct, God Creates the Universe ( all physical matter). Then when the earth reaches it stage as a ball of water genesis 1:2 starts.

Put another way, the time it takes to furnish a house doesn’t tell us how long it took to build the house. Genealogies certainly helped verify that Jesus was the Jewish Messiah.
