The concentration and types of sugars play a significant role. Maple syrup, rich in sucrose, can be heated and agitated to evaporate the water content, allowing sugar crystals to form. However, other sources, like honey and sorghum, which contain a mix of sugars such as fructose and glucose, do not readily crystallize with heat alone.
Impurities also influence crystallization. Maple syrup has fewer impurities compared to other sources high in sucrose like cane and beet syrup. These impurities can hinder crystallization and contribute to stickiness.

Am curious does the maple sugar always taste like maple if so can you somehow take the maple flavor out?
I don't want maple flavored coffee or cookies.
@@flatout5815 This is dependant on the colour of maple syrup you use. Lighter coloured syrup will produce a granulated sugar with little to no maple flavour. Just sweet like table sugar. Darker maple syrup will produce a granulated sugar with some maple flavour. The colour of the syrup darkens later in the maple syrup season.

I'm amazed to learn more about the sugar crystallization process.
As a side note, here in the Philippines, some sugarcane farmers can produce brown sugar "muscovado" just by boiling and agitating the sugarcane juice.
This is important, never knew I could produce my own.

@@samauthor342 That's my fallback position. I'm going to try to crystallize the sugar water to obtain a raw sugar-like substance, and if that fails, I'll go with the beet molasses. Cheers!

Very few sugarcane fields are burnt each season. Yes maybe 50yrs ago burning was a lot more common.
Very few sugar cane fields are burnt in the *developed countries* that produce cane sugar. The situation in developing countries that produce the majority of cane sugar is much different.

Ok so no instructions on how to actually make sugar from beets then……
At what point do you stop beating the hot syrup to make whipped maple or butter? Is there a difference between the two?
The main difference is that you do not bring the syrup to as high of a temperature on the stove. The rest of the process is pretty much the same.

100% possible to make maple sugar!!! Last year we used only maple sugar, this year… well it was sucky here…. We still have some but less
It was a weird year here too, luckily we were able to capitalize on the good days and still get a good batch, not as much as usual though.

Yes in terms of needing a lower volume of sap to start with before evaporating off all the water to make syrup. Once it is syrup, it does not matter what 🍁 it came from.
When you say dark maple syrup is that from a certain maple tree? Does one produce a lighter syrup?
You get a range of colours from the same tree through the season… 🙂🍁did you see the last video? We show the range of colours we got this year. As the season progresses the syrup tends to get darker.
