    Sorry if I missed it but what exactly was the purpose of mixing the liquid honey with crystalized honey? To make "cream honey"? A certain textured type honey? And if so won't that cream honey become crystalized or granulated quickly changing the consistency?

      His goal was to crystallize the liquefied honey as well, using the already existing crystallized honey. I've heard about this process before, I think basically the already crystallized honey acts as a seed, and the crystals spread to the liquefied honey, crystallizing them. It seems to be faster than other methods, but of course, you need preexisting crystallized honey to do this.
